Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

04

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Producers

Tano, KochiTanoya Seihachi

A genuine sun-dried salt made using only the sun's heat, with painstaking care. Entirely handmade, it grows into crystals that melt in the mouth, the very finest sun-dried salt.

The Art of Pairing: Maximizing the Appeal of Seafood and Drinks

To further enhance the delicate flavors of fresh seafood and the savory aroma of straw-grilled dishes cooked right before your eyes, choosing the right drink is essential. In Western cuisine, the concept of wine pairing is widely known. Just as wine can complement a dish or even bring out new aspects of its flavor, at Robata & Sake Uomaru Nagahama, our extensive selection of sake plays this vital role.

Sake comes in a wide variety of types, from light and dry to rich and sweet, from fruity aromas to aged profiles. By combining the unique character of each sake with our specialty dishes—fresh fish direct from the port and straw-grilled delicacies—the possibilities for pairing are virtually endless. Selecting a sake that matches the seasoning, cooking method, and your personal preference brings out the best in both, creating new discoveries and delights with every sip.

  • The importance of drinks in deepening the flavor of a dish.
  • The profound depth of pairing created by the diversity of sake.
  • Applying the general concept of pairing to Japanese sake.

For Fresh Sashimi Direct from the Port, a Crisp and Dry Sake

One of our specialties is sashimi, prepared by skilled chefs using fresh fish delivered directly from the fishing port—a true masterpiece that highlights the natural umami of the ingredients. For delicate yet flavorful seafood, such as our yellowtail belly (buri harami) sashimi with its melt-in-your-mouth texture and rich flavor, a crisp, dry (tanrei karakuchi) sake is a perfect match, cleansing the palate beautifully.

This type of sake enhances, rather than overpowers, the elegant sweetness and umami of the seafood. By choosing a type with a subtle aroma and a gentle mouthfeel, you can fully enjoy the authentic taste of the fresh fish. One bite of food, one sip of sake—the harmony of the ocean's bounty and the pure taste of sake that unfolds in your mouth is a moment of pure bliss.

  • Tips for choosing sake to complement the delicate flavors of fresh seafood.
  • The best type of sake for fatty fish like yellowtail belly sashimi.
  • The appeal of a crisp sake that doesn't overwhelm the ingredients.

For the Robust Aroma of Straw-Grilled Dishes, a Rich Junmai Sake

Our straw-grilled (warayaki) dishes, featuring bonito from Kochi or local Omi beef seared dramatically before your eyes, never fail to captivate guests with their enticing smoky aroma. To match these powerful, complex aromas and deep flavors, a rich junmai sake with a pronounced rice umami is an excellent choice.

The rich aroma and body of junmai sake harmonize wonderfully with the unique flavor of the warayaki, deepening the taste of both. By selecting a sake with a solid body that can stand up to the powerful aroma of the dish, the deep flavor of the sake will follow each wave of umami from the meat or fish, allowing you to enjoy a long, pleasant finish. Savor the layers of flavor that change with every bite.

  • How to choose a sake that complements the unique flavor of straw-grilled dishes.
  • The mechanism by which rich junmai sake enhances the umami of warayaki.
  • The synergistic effect of pairing powerful dishes with robust sake.

For Seasonal Robatayaki, a Sake to Match the Season

Our seasonal robatayaki, featuring seasonal seafood and vegetables grilled slowly over charcoal, is a great way to enjoy the tastes of the season. By pairing these grilled dishes, which maximize the natural umami of seasonal ingredients, with a sake that also reflects the season, you can enjoy an even richer culinary experience that embodies the four seasons of Japan.

For example, you might consider the temperature of the sake—warm sake (kanzake) to go with hot dishes in the cold winter months, or refreshing cold sake (reishu) or unpasteurized sake (namazake) during the summer heat. This adds another layer of depth to the pairing. Another great approach is to ask our staff for their recommendation based on the day's seasonal ingredients and your mood. Our experienced team will propose the perfect cup for that moment.

  • The magic of combining seasonal ingredients with seasonal sake.
  • The pleasure of pairing by considering the temperature of the sake.
  • Staff recommendations for the best sake.
