Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

In particular, the combination of our proud fresh seafood and straw-grilled dishes with carefully selected sake is truly worthy of being called the ultimate pairing. The harmony of flavors and aromas that spreads with each bite maximizes the natural taste of each ingredient, significantly enhancing your dining experience.

At our restaurant, we place great importance on enjoying the compatibility between food and drink. Sake that highlights the delicate flavors of the dish, or dishes that bring out the depth of sake. The magic happens when their individual characteristics elevate each other. We sincerely wish to deliver that sensation to our customers.

However, some guests might wonder, Which sake should I pair with which dish? Please rest assured. The staff at Uomaru Nagahama are well-versed in the characteristics of each dish and sake, and will suggest the optimal combination according to your preferences and mood. We invite you to discover your special drink and finest dish pairing at our restaurant.

Understanding the Basics of Sake Pairing

There are several basic principles for pairing food and sake. Knowing these will make your dining experience at Uomaru Nagahama even more enjoyable and profound.

  1. Synchronization of Flavors: Matching the flavors of the dish and sake creates a sense of unity. For example, a crisp, dry sake pairs well with light white fish sashimi.
  2. Complement of Flavors: Combining different flavors can compensate for each other's weaknesses and create new tastes. For example, a sharp sake can cut through the richness of fatty fish, refreshing the palate.
  3. Emphasis of Aromas: Identifying common aromatic notes between food and sake can lead to effective combinations where they enhance each other. A sake with a vibrant ginjo aroma might pair well with fragrant ingredients.

Keep these basics in mind as you try various pairings at Uomaru Nagahama. Of course, choosing intuitively without overthinking it is also a great way to enjoy.

The Bounty of the Sea: Fresh Fish Direct from the Port and Carefully Selected Sake

One of the pillars of Uomaru Nagahama's cuisine is, without a doubt, fresh fish delivered directly from the fishing port. The fresh seafood, arriving daily, is elevated into sashimi by skilled artisans, maximizing its inherent qualities. The translucent flesh, firm texture, and rich umami that spreads in your mouth are proof of its freshness. In particular, the fatty Buri Harami Sashimi (yellowtail belly sashimi) is a must-try delicacy, characterized by its melt-in-your-mouth texture and rich flavor.

For this fresh bounty of the sea, sake is, of course, indispensable. Choosing a sake that enhances the umami without overpowering the delicate flavors of the seafood is key to pairing. Uomaru Nagahama offers a rich selection of carefully chosen sakes from all over Japan, making it a joy to find the perfect bottle for each type of seafood.

Recommended Sake Pairings for Fresh Sashimi

Pairing fresh sashimi with sake is truly the pinnacle of Japanese culinary culture.

  • White Fish Sashimi (e.g., Sea Bream, Flounder):
For delicate white fish, a Tanrei Karakuchi (light and dry) sake with subtle aroma and a crisp finish is recommended. It won't overpower the fish's natural flavor and cleanses the palate.
  • Red Fish Sashimi (e.g., Tuna, Bonito):
For red fish with rich umami, a Umakuchi (rich and savory) sake with a noticeable rice flavor or one with a gentle acidity pairs excellently.
  • Fatty Fish Sashimi (e.g., Yellowtail, Salmon):
For rich, fatty fish like Buri Harami Sashimi, a Junmai Ginjo or Ginjo-shu with refreshing acidity and a clean finish is recommended. It cuts through the richness and refreshes the palate.

At Uomaru Nagahama, the fresh fish offered changes with the seasons. Discovering seasonal fish and limited edition sakes that arrive at the time is another unique pleasure of this restaurant. If you're unsure, don't hesitate to ask the staff, What's today's recommended sake? or Which sake pairs well with this sashimi? They will surely help you find the best combination.

The Art of Flame Before Your Eyes: Straw-Grilled Dishes and Shiga Local Sake Mariage

Another signature dish at Uomaru Nagahama is the Warayaki (straw-grilled), dramatically cooked right before your eyes. Fresh bonito delivered directly from Kochi and Omi Beef, a brand-name beef proudly from Shiga Prefecture, are quickly seared over high flames with straw, a truly impressive spectacle. The fragrant aroma of straw maximizes the umami of the ingredients, creating a unique flavor and texture.

In particular, the Kochi Direct Bonito Straw Grill is an exquisite dish where the bonito's natural umami is condensed, with a crispy exterior and tender interior. And the Shiga Prefecture Omi Beef Straw Grill further enhances the rich fat and red meat umami of Omi Beef with the scent of straw, spreading a rich flavor throughout your mouth. For these robust dishes, pairing them with equally robust and distinctive sakes is recommended.

Recommended Sake Pairings for Straw-Grilled Dishes

The combination of fragrant straw-grilled dishes and sake truly stimulates the appetite.

  • Kochi Direct Bonito Straw Grill:
For the flavorful straw-grilled bonito, a Junmai-shu with solid umami and richness, or a slightly robust Tokubetsu Junmai-shu pairs well. The fragrance and the sake's umami enhance each other.
  • Shiga Prefecture Omi Beef Straw Grill:
For Shiga's proud Omi Beef straw grill, a Shiga Jizake (local sake from Shiga), nurtured by Shiga's climate, is optimal. Local sakes with a strong rice umami and a crisp finish harmonize with the meat's fat while refreshing the palate. A Junmai Ginjo with a vibrant aroma would also highlight the elegant taste of Omi Beef.

Besides these straw-grilled dishes, Uomaru Nagahama also offers Seasonal Robatayaki (grill) that changes with the seasons. Dishes featuring seasonal vegetables and seafood, carefully grilled over an open hearth, bring out the natural flavors of the ingredients, simple yet excellent with sake. Sitting at the counter, you can fully enjoy the dynamic spectacle of the straw grill and the savory aroma of ingredients cooking on the hearth, further stimulating your appetite.
