Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Producers

A Guide to Uomaru Nagahama's Deluxe Takeout Menu

Here's how to make the most of our takeout menu to fully enjoy the essence of Nagahama Station seafood at home.

Our Top Recommendations for Takeout

From our extensive menu, we've selected a few dishes that are particularly well-suited for enjoying at home. These have been chosen for their freshness, flavor, and ease of eating in a home setting.

  1. Straw-Grilled Bonito from Kochi (Market Price)
One of our signature dishes, this features fresh bonito sent directly from Kochi, spectacularly straw-grilled right before your eyes. The fragrant aroma of the straw whets the appetite, and the concentrated umami flavor fills your mouth. It pairs exceptionally well with sake or shochu, especially with a side of condiments. For the best experience at home, let it come to room temperature slightly before eating to enhance the straw-grilled aroma.

  2. Straw-Grilled Omi Beef from Shiga Prefecture (from 1,859 yen)
We also offer Omi beef, Shiga's prized brand of cattle, prepared straw-grill style. Searing it quickly over the straw flame maximizes its aroma and the meat's natural umami. The tender and juicy Omi beef is perfect for a special occasion feast. A quick, gentle reheating is all it takes to enjoy a taste that's just as good as in the restaurant.

  3. Sashimi of Fresh Fish Direct from the Port (Market Price)
Our skilled chefs carefully prepare sashimi from fresh fish delivered directly from the fishing port daily. It's characterized by its firm texture and the natural sweetness of the fish. The fatty Yellowtail Belly Sashimi (880 yen) is particularly exquisite. A touch of soy sauce is all you need to highlight the quality of the ingredients. Please enjoy it as soon as possible after taking it home.

  4. Shrimp Cream Spring Rolls
A favorite among all ages. A crispy wrapper is packed with rich, creamy shrimp filling. To enjoy them as if they were freshly fried, we recommend reheating them briefly in a toaster oven.

These menu items encapsulate the appeal of our Nagahama izakaya and will surely enrich your dining table at home. The straw-grilled dishes, in particular, are made using a technique that's difficult to replicate at home, so we highly recommend giving them a try.

Tips for Choosing a Menu for Any Occasion

You can make a more satisfying choice by considering the occasion for your takeout order.

  • For a Solo Drink
A small portion of Yellowtail Belly Sashimi or Straw-Grilled Bonito. Pair it with some of our Selected Sake (from 500 yen) to enjoy a blissful Nagahama sake tasting experience.

  • For a Family Dinner
Feature the Straw-Grilled Omi Beef as the main dish, and add a few other items like the kid-friendly Shrimp Cream Spring Rolls and some Seasonal Robata-yaki to create a magnificent spread.

  • For Entertaining Important Guests
An assorted platter of Sashimi of Fresh Fish Direct from the Port and the Straw-Grilled Omi Beef. The presentation is gorgeous and is sure to get the conversation flowing. Order in advance to ensure a stress-free preparation.

We offer a diverse lineup to meet our customers' various needs. Please enjoy the flavors of Uomaru Nagahama to your heart's content in the comfort of your home.

Important Notes and Recommended Preparations

To ensure you receive our food in the best possible condition and can enjoy it deliciously at home, here are a few notes and recommendations.

  • Make an Advance Reservation
For popular items or dishes that take time to prepare, like our straw-grilled items, ordering in advance ensures a smooth pickup. Depending on how busy we are, we may not be able to prepare your order for your desired time, so we appreciate you ordering with plenty of notice.

  • Bring an Eco-Bag or Cooler Bag
For raw items like fresh sashimi, we highly recommend bringing a cooler bag to maintain freshness. While we provide simple bags, your cooperation helps ensure you can take your food home safely.

  • Confirm Your Transportation
Although we are within walking distance of JR Nagahama Station, you may want to come by car if you have a large order or if the weather is bad. Please note that we do not have a dedicated parking lot, so you will need to use a nearby paid parking facility.

  • Bring Your Food Home Promptly After Pickup
After receiving your food, please take it home as quickly as possible and store it properly in the refrigerator.

By making these preparations, you can enjoy your Nagahama Station seafood more deliciously and safely.

Tips to Make Your Takeout Food Even More Delicious

Since you're enjoying takeout from Robata and Sake Uomaru Nagahama, we want you to have it in the most delicious way possible. Here are a few simple tips to elevate the restaurant's flavors even further.

Proper Storage and Simple Reheating

Different types of dishes require different storage and reheating methods.

  • Fresh Sashimi
Refrigerate immediately after bringing it home. It's best to eat it on the same day. Just before eating, take it out of the fridge and let it sit for a moment to allow the fish's natural umami to come through. Freshness is key, so please avoid storing it until the next day.

  • Straw-Grilled Items (Bonito, Omi Beef)
These are delicious even when cool, but reheating them can revive the wonderful straw-grill aroma and make them even tastier. Warm them gently in the microwave or lightly sear the surface in a frying pan. Be careful not to overheat them, as this can toughen the meat or fish.

  • Fried Items like Spring Rolls
Reheating in a toaster oven will restore their crispy, freshly-fried texture. We recommend using a toaster over a microwave. Warm them until the surface is crisp, being careful not to burn them.

Plating Ideas for a Beautiful Table Setting

A little creativity can transform your home dining table into a special space, just like our izakaya with a great atmosphere in Nagahama.

  • Use Your Favorite Dishes
Simply plating the food on your favorite large platter or small bowls can make it look stunning. For sashimi, add some colorful vegetables for a vibrant presentation.

  • Add Condiments and Garnishes
For the straw-grilled dishes, add condiments like green onions, myoga ginger, or shiso leaves to enhance the flavor. A squeeze of lemon or sudachi citrus is also recommended. For sashimi, go beyond wasabi and ginger by adding daikon sprouts for a professional touch.

  • Create Ambiance with Lighting and Music
Dim the lights and play your favorite background music to create an atmosphere as if you were in a Nagahama izakaya. Gather around our dishes and enjoy a wonderful time to your heart's content.

We hope you'll use these tips to get the most out of our Nagahama Station seafood at home.
