Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Safe Dining: Allergy-Friendly Robatayaki and Seafood in Shiga

To Our Guests with Allergies: How to Safely Enjoy Shiga's Robatayaki and Seafood

Located in Nagahama City, Shiga Prefecture, Robata to Nihonshu Uomaru - Nagahama Branch is a robatayaki restaurant proud of its fresh seafood delivered directly from the fishing port and its spectacular straw-fired grilling prepared right before your eyes. In our charming space, a renovated traditional Japanese house, you can fully enjoy seasonal flavors and a carefully selected range of sake from across Japan. We offer everything from lively counter seats to relaxing private rooms, catering to a wide variety of occasions, from solo diners to families and company banquets.

However, for guests with allergies, dining out can sometimes be a source of anxiety. Worries like What's in this dish? or Is there anything I can eat safely? are common. At our restaurant, we want every guest to have a wonderful dining experience in Nagahama. That's why today, we'd like to share some important tips for guests with allergies to safely enjoy our Shiga robatayaki and seafood dishes.

The Concerns of Guests with Allergies

Everyone shares the desire to eat delicious food with peace of mind. For those with food allergies, in particular, choosing from a menu and ordering when dining out requires caution. Unintentional allergen cross-contamination, the use of unlisted ingredients, or a lack of communication with staff can all amplify anxiety.

  • Anxiety when menus lack allergen information.
  • Concern about allergen cross-contamination during the cooking process.
  • Worrying about whether requests can be effectively communicated to staff.
  • Feeling like you are inconveniencing your dining companions.

It's a shame when a wonderful meal is ruined by such anxieties. We strive to work closely with each guest to ensure they can dine with as much peace of mind as possible. As an establishment that handles fresh seafood, meticulous attention to our ingredients is paramount. We want everyone to enjoy robatayaki and sake without worry in our private rooms for seafood dining in Nagahama.

Our Approach to Ensuring You Can Safely Enjoy Shiga's Robatayaki and Seafood

We take several precautions to ensure that guests with allergies can enjoy their meal as comfortably as possible. The most crucial element is close communication between our guests and our staff.

Thorough Communication with Our Guests

We recognize that information about allergies is extremely important as it directly relates to your health and safety. We may ask about any allergies when you make a reservation or when we show you to your table. Any information you provide will be accurately relayed to the kitchen, and we will take the utmost care in preparing your meal. Please note that our staff speaks Japanese.

As a Nagahama izakaya with a great atmosphere, we also focus on creating an environment where guests feel comfortable consulting with us. At our lively Nagahama izakaya counter seats, you can watch the chefs cook right in front of you and ask them questions directly. We also have relaxing private rooms where you can discuss your needs in a more private and calm setting.

Ingredient-Focused Cooking Methods and Potential Flexibility

Our restaurant employs many simple cooking methods designed to maximize the natural flavors of our ingredients, such as skilled chefs preparing sashimi from fish delivered directly from the port, or straw-grilling bonito from Kochi and Omi beef from Shiga right before your eyes. This philosophy of letting the ingredients shine can also be a key factor in accommodating allergies.

For example, if you have an allergy to a specific seasoning or a hidden ingredient, our straightforward cooking style may allow us to adjust or omit certain seasonings upon request. While we cannot promise to accommodate every request perfectly for all dishes, we will listen to your needs and discuss them carefully on a case-by-case basis. We will do our best to ensure you can fully enjoy the delights of Shiga robatayaki and seafood.

The Importance of Advance Consultation for Banquets and Course Menus

Sharing information in advance is especially effective when booking for large groups, such as company banquets or family gatherings, or when ordering a set course menu. We offer a variety of banquet courses, including all-you-can-drink options that feature fresh seafood, straw-grilled dishes, and seasonal specialties.

Since the ingredients for these courses are largely predetermined, informing us clearly about any allergies at the time of booking allows for a smoother response, such as proposing alternative dishes or changing ingredients. For example, if a guest has a shellfish allergy, knowing in advance allows us to consider flexible options like substituting another seafood dish or a specialty made with Omi beef. Even for our special Nagahama sake tasting courses, we can review the food pairings in advance and attempt to make allergy-conscious adjustments.

Concrete Steps for Communicating Your Allergies

To help us ensure you have a safe dining experience, we ask for your cooperation on a few points. Communicating your allergy information effectively leads to a safer and more satisfying meal.

  1. Provide detailed allergy information when booking

When booking by phone (0749-63-6688) or online, please specify the type of allergy and the exact ingredients you cannot eat. For example, saying I have an egg allergy and cannot eat any dishes containing egg helps us prepare.

Advance notice is especially crucial when ordering a course menu or visiting during busy weekend hours (we are open from 1 PM on weekends for daytime drinking), as preparation may take longer.

  2. Remind the staff again upon arrival

Even if you mentioned your allergies when booking, please inform the staff member who seats you upon your arrival. This ensures the information is reliably shared and allows for a final check with the chef in charge, so you can dine with confidence.

Simply saying, I'm the one who mentioned an [allergy name] allergy when booking, can facilitate smooth coordination. As a Nagahama izakaya, we prioritize clear communication with our guests.

  3. Specify the severity of your allergy and the level of restriction required

There is a significant difference in the level of precaution needed between a dislike for an ingredient and a severe anaphylactic reaction. Please let us know the specific symptoms and the degree of restriction required, from mild to severe, so our staff can make the most appropriate judgments and preparations.

Information such as even trace amounts of the allergen are dangerous is a critical factor for our kitchen staff.

  4. Please don't hesitate to ask about anything you're unsure of

If you have any questions about the ingredients used in our dishes while looking at the menu, please do not hesitate to ask our staff. While many of our dishes feature fresh fish from the port and local Shiga ingredients, it's always best to clarify any concerns on the spot to be completely safe.

Specific questions like, How many types of fish are in this sashimi platter? or Does the sauce for the straw-grilled dish contain [allergen]? are always welcome.
