Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Nagahama in seasonal plates such as our five-kind sashimi platter.

04

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Producers

Especially when searching for a Nagahama private banquet izakaya, many wonder how to ensure everyone can enjoy themselves to the fullest. At our restaurant, we are dedicated to providing sincere allergy accommodation so that each guest can dine with peace of mind. This article details our specific initiatives.

Challenges in Choosing a Nagahama Private Banquet Izakaya and the Importance of Allergy Accommodation

For organizers planning large group banquets—be it company farewell parties, class reunions with friends, or family celebrations—choosing the right venue is a mission of great responsibility. Especially when booking privately, it's natural to want to provide a space and cuisine that satisfies all participants.

In recent years, there has been an increase in individuals with food allergies or those avoiding certain ingredients due to health or religious reasons. In such situations, if there are guests with allergies or dietary restrictions, organizers often worry, What if they can't enjoy the banquet even though it's a special occasion? or What if something serious happens?

That's why, when choosing a Nagahama private banquet izakaya, meticulous allergy accommodation is just as crucial as delicious food, drinks, and a good atmosphere. To ensure everyone can enjoy seafood cuisine near Nagahama Station with peace of mind, our restaurant highly values consideration for each guest's food needs.

Specific Initiatives for Allergy Accommodation Proposed by Robata & Sake Uomaru Nagahama Store

At Robata & Sake Uomaru Nagahama Store, we approach allergy accommodation from various angles, from pre-preparation to day-of service, to ensure our guests can truly enjoy our cuisine and sake with peace of mind. We emphasize even closer coordination, especially for private bookings.

  • Detailed Pre-Consultation and Discussion: From the moment of reservation, we carefully inquire about guests' allergies and dietary restrictions.

  • Meticulous Care and Safety Management in the Kitchen: We thoroughly work to prevent allergen contamination, from ingredient management to the cooking process.
  • Enhanced Information Sharing and Coordination with Day-of Staff: We consistently share the latest information among staff to ensure smooth and safe service delivery.

Ensuring Peace of Mind Through Thorough Pre-Consultation

The key to successful allergy accommodation at a Nagahama private banquet izakaya lies, above all, in prior information sharing. At our restaurant, we will thoroughly confirm participants' allergy information through the organizer during reservation or banquet planning meetings.

  1. Consultation During Reservation or via Phone
When making your banquet reservation or contacting us by phone, please inform us if any guests have food allergies and what specific allergens they are. We also welcome you to discuss any disliked ingredients or dietary restrictions due to religious reasons at this stage.
  2. Specifics of Allergic Ingredients and Severity of Symptoms
To create a safer menu, please provide specific details on which of the 7 specified allergens (eggs, dairy, wheat, buckwheat, peanuts, shrimp, crab) or the 21 items equivalent to specified allergens cause issues, and at what quantity symptoms appear (e.g., if even trace amounts cause a reaction).
  3. Requests for Alternative Ingredients or Cooking Methods
If you have requests such as please avoid this ingredient, but this alternative is fine or please don't use soy sauce, we will endeavor to accommodate them as much as possible and consider reflecting them in the menu.

Proposing Individually Tailored Menus Utilizing a Rich Variety of Ingredients

Robata & Sake Uomaru Nagahama Store handles a wide range of ingredients, including fresh fish directly from fishing ports, Omi beef from Shiga Prefecture, and seasonal fresh vegetables. This extensive lineup allows for flexible menu adjustments to accommodate guests' allergies and dietary restrictions. We strive to offer dishes that everyone can enjoy without compromising the appeal of Shiga Robatayaki seafood.

  • Fresh Sashimi
The flavor of fresh fish, directly from the fishing port, is paramount. We can propose cooking methods that enhance the natural taste, such as using salt, lemon, or simple soy sauce, avoiding dressings or condiments that contain specific allergens. For instance, when enjoying yellowtail belly sashimi, we can adjust the seasonings according to your preferences.
  • Straw-Grilled Dishes (Bonito from Kochi, Omi Beef from Shiga)
Our specialty straw-grilled dishes feature bonito directly from Kochi and Omi beef from Shiga Prefecture, dynamically grilled right before your eyes to impart a savory straw aroma. Regarding seasoning, we offer flexible options for guests with allergies, such as serving with simple salt or citrus instead of soy sauce-based sauces.
  • Seasonal Robatayaki
Dishes of seasonal vegetables, seafood, and mountain delicacies simply grilled over an open flame highlight the ingredients' natural flavors. We take care to minimize allergens while ensuring you can fully enjoy the unique taste of each season.

For private banquets, it is possible to individually change some dishes or prepare alternatives while consulting on the overall course structure. We do our utmost with the desire for all guests to deliciously enjoy seafood cuisine near Nagahama Station.

Safety Management in the Kitchen and Staff Collaboration

We believe that guest safety and peace of mind are as important as the deliciousness of our food. Therefore, in the kitchen, we exercise the utmost care to prevent allergen contamination and ensure thorough information sharing among staff.

  • Use of Dedicated Cooking Utensils and Cutting Boards
When preparing dishes requiring allergy accommodation, we take measures to prevent cross-contamination, such as using dedicated cooking utensils and cutting boards where possible.
  • Thorough Ingredient Management with Allergen Labeling
We verify allergen labeling for all ingredients used and manage them thoroughly. Special attention is paid to hidden allergens in processed foods.
  • Sharing Allergy Information with All Staff
Allergy information gathered during reservations is shared with kitchen staff and all front-of-house staff responsible for serving. We do not neglect final checks when serving dishes to guests. We also prioritize meticulous consideration when guiding guests to our lively counter seats.

These unseen efforts form the foundation for guests to truly enjoy Shiga Robatayaki seafood with peace of mind.
