Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Nagahama.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Nagahama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Nagahama.

05

Private Rooms & Banquets

Relaxing private rooms, banquet courses with free-flow drinks, and full-venue bookings on request. Steps from Nagahama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Savor the Season at a Nagahama Izakaya

An Invitation to Shun, Coloring the Nagahama Night: Welcome to Robata to Nihonshu Uomaru Nagahama-ten

Located in the heart of Nagahama City, Shiga Prefecture, just a short walk from JR Nagahama Station, Robata to Nihonshu Uomaru Nagahama-ten is a Nagahama izakaya dedicated to offering guests a special culinary experience. In our charming Japanese space, a tastefully renovated historic building, we serve dishes that cherish the shun (the best of the season), paired with a carefully selected range of Japanese sake. We invite you to experience the luxury of savoring the most delicious offerings of each season while soaking in the unique atmosphere of Nagahama.

For customers thinking, I'm looking for a Nagahama izakaya, but all the menus seem the same... or Since I've come all the way to Nagahama, I want to enjoy seasonal flavors I can't find anywhere else, Robata to Nihonshu Uomaru Nagahama-ten is the place we confidently recommend. In this article, we will delve deeper into the appeal of the shun we offer and how to best enjoy it.

We particularly want those searching for terms like Nagahama seafood or Shiga robatayaki seafood to notice our commitment to seasonality. Our wish is to be a place where both locals and tourists visiting Nagahama can fully appreciate the richness of this region's cuisine.

Enrich Your Nagahama Dining Experience: Are You Missing Out on Seasonal Delicacies?

We often hear people say, I know there are different delicacies for each season, but I'm not sure what specific dishes are available or how to choose. When visiting Nagahama, you naturally want to enjoy the best flavors of the season. However, just looking at a menu can make it difficult to determine what is truly in season or if an ingredient's inherent charm has been maximized.

Furthermore, with a wide variety of Nagahama Japanese sake available, finding the perfect bottle to match a seasonal dish or suit your personal taste can seem like a daunting task. While standard menu items are wonderful, missing out on the special tastes that only appear at certain times of the year is a true shame.

We put great effort into ensuring our guests can savor the bounty of the seasons in the best possible way. For instance, our selection of Nagahama seafood, delivered directly from the fishing port, varies daily depending on the catch, and our Shiga Prefecture ingredients change with the seasons. By making the most of these, we aim to consistently offer our customers fresh surprises and delights. Whether you're relaxing in a private room at our Nagahama izakaya or feeling the vibrant energy at our counter seats, we hope you'll enjoy the harmony woven by seasonal ingredients and Japanese sake to your heart's content.

How to Enjoy the Shun Presented by Robata to Nihonshu Uomaru Nagahama-ten

At Robata to Nihonshu Uomaru Nagahama-ten, we have several commitments to provide our customers with a seasonal gourmet experience. Here, we introduce specific points to help you deeply appreciate the charm of our shun.

Savor Carefully Selected Seasonal Seafood, Tsukuri (Sashimi) and Robatayaki Style

  • Fresh Fish Direct from the Port: We source the most delicious fish and shellfish of the season directly from the fishing port. This allows us to offer rare fish not often found in the market and seasonal fish at their peak of flavor, always fresh. For example, in winter, we prepare melt-in-your-mouth Buri Harami no Tsukuri (Yellowtail Belly Sashimi), ensuring we serve the best of each season.

  • Tsukuri Highlighting a Master Chef's Skill: The true value of fresh seafood is revealed in our tsukuri (sashimi), meticulously prepared by our skilled chefs. The fish's natural umami and texture, along with the beautiful presentation, are truly a work of art. Our Today's Fresh Fish, which changes with the daily catch, is a special dish only available to those who visit.

  • Robatayaki to Enhance Natural Flavors: By slowly grilling over the hearth, seasonal seafood and vegetables gain an irresistible aroma and enhanced umami. This simple cooking method allows the natural deliciousness of the ingredients to shine. Enjoy the perfect texture—crispy on the outside, moist and fluffy on the inside—achieved by the far-infrared effect of the charcoal fire. You can fully experience the best of Shiga robatayaki seafood.

Aromatic Seasonal Bounties Finished with Warayaki (Straw-Fire Grilling)

  • Katsuo no Warayaki (Straw-Grilled Bonito) Direct from Kochi: One of our specialties, the straw-grilled bonito in Nagahama, features fresh bonito delivered directly from Kochi, seared in a spectacular blaze of straw right before your eyes. The straw fire instantly sears the surface of the bonito, imparting a fragrant aroma and concentrated umami. We serve the best bonito of the season, from the summer catch to the richer autumn modori-gatsuo.

  • Warayaki of Shiga's Prized Omi Beef: The Omi Beef Robatayaki in Nagahama, featuring brand-name beef from Shiga Prefecture, is another exquisite dish you can only find here. Grilling with straw locks in the meat's umami and adds a rich aroma. The fragrant scent and melt-in-your-mouth texture upon the first bite are a blissful experience. We serve it with seasonal vegetables, offering a taste unique to that time of year.

  • Seasonal Vegetables and Seafood Also Prepared Warayaki Style: It's not just bonito and Omi beef. Vegetables and other seafood that are in season are also transformed with new flavors through straw-fire grilling. Seasonal ingredients enveloped in the fragrant aroma of straw promise a culinary experience unlike any other.

Seasonal Japanese Sake Pairings that Harmonize with Your Meal

  • Carefully Selected Japanese Sake from Across the Country: As specialists in Nagahama Japanese sake, we have an extensive collection of carefully chosen sake from all over Japan. We also offer limited-edition seasonal brews, such as Hiyaoroshi in the fall and Shiboritate in the winter, that can only be enjoyed at specific times of the year.

  • Discover Local Shiga Sake: We also feature a wide selection of local sake from Shiga Prefecture. As a tourist-friendly izakaya in Nagahama, we believe pairing these fine local brews, nurtured by the region's climate, with dishes made from local ingredients like Nagahama seafood and Omi beef robatayaki is the ultimate experience. Feel free to ask our staff about the unique character of each sake and its best food pairing.

  • The Joy of Sake Tasting Flights in Nagahama: We may also offer tasting sets that allow you to sample various types of sake in small portions. It's a delightful way to discover your new favorite by comparing the flavors and aromas of different styles, from Junmai Daiginjo to Junmai. Exploring pairings with seasonal dishes is one of the true pleasures of dining at a Nagahama izakaya.

Feeling the Season in a Charming Atmosphere

  • A Renovated Japanese Space with Character: Our restaurant is housed in a renovated old building, featuring a charming and traditional Japanese atmosphere. Despite being a seafood restaurant in front of Nagahama Station, you can spend your time in a relaxed, nostalgic setting. The seasonal decorations and the view of Nagahama's townscape from the windows will further enrich your dining experience.

  • Seating for Every Occasion: At our lively counter seats, you can enjoy watching the flames of the warayaki and the chefs' brilliant skills up close. We can also be used as a Nagahama izakaya with private rooms, ensuring a private space for various occasions, from dates and family dinners to company banquets in Nagahama. Spend a memorable time conversing with your loved ones while feeling the changing seasons.

  • Weekend Daytime Drinking Too: On weekends, we open from 1:00 PM, so you can enjoy hirunomi (daytime drinking), slowly sipping Nagahama Japanese sake and savoring seasonal dishes. The luxury of dining during the bright hours of the day has its own special charm.
