Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

03

04

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Producers

Want to Go Beyond the Usual Izakaya Experience? How to Savor Truly Delicious Seasonal Flavors in Nagahama

Many of you probably think, When I go to an izakaya, I don't just want to fill my stomach—I want to fully enjoy the unique, delicious food of the region. We know that those searching for terms like Nagahama seafood or robata grill Nagahama have high expectations for ingredient quality and cooking methods. However, finding a restaurant among the many izakayas near Nagahama Station that truly brings out the best of seasonal flavors and offers a memorable meal can be surprisingly difficult.

For example, it would be a shame to visit Nagahama only to be met with a generic menu. It's also a waste to miss out on the truly delicious foods that are only available at certain times of the year. Our restaurant is thoroughly dedicated to every step, from daily sourcing to preparation, to meet our customers' desires to eat something more delicious and fully enjoy seasonal flavors. We will now introduce the specific ways we bring the finest treasures of the sea and mountains, which change with the seasons, to your table.

  • For customers seeking the best of the season, not just a standard menu
  • To meet the desire for high-quality, fresh ingredients
  • For those looking for a truly satisfying experience at an izakaya near Nagahama Station

Fresh Fish Direct from the Port: Taste the Changing Seasons on Your Palate

For those drawn to the words Nagahama seafood, the most important factors are surely freshness and quality. At Robata & Sake Uomaru Nagahama, our greatest pride is our fresh fish, delivered directly from the fishing port. Our skilled chefs select the finest seafood with a discerning eye, serving it to you in its absolute best condition. The seasons bring a rich bounty to the sea, and we make it our mission to deliver the most delicious seasonal fish at its peak to our customers.

The Art of Tsukuri (Sashimi): A Tapestry of Seasonal Seafood

The best way to enjoy seasonal fresh fish is simply as tsukuri (sashimi). Japan's four seasons bless us with an incredible variety of seafood: cherry sea bream in spring, grunt fish in early summer, returning bonito and fatty saury in autumn, and yellowtail and crab in winter. At our restaurant, our expert chefs carefully prepare the catch of the season, creating sashimi that maximizes the natural umami of the ingredients. This exceptionally fresh seafood melts in your mouth, its rich aroma and flavor a true testament to the essence of seafood cuisine in front of Nagahama Station. You can enjoy the best seafood of the moment, such as our Yellowtail Belly Sashimi available for 880 yen.

  • Truly live fresh fish delivered directly from the fishing port
  • Delicate knife work by our skilled chefs
  • Savor seasonal seafood as Shiga robata grill seafood or as sashimi

The Perfect Pairing with Japanese Sake

Fresh sashimi pairs exceptionally well with Nagahama Japanese sake. A crisp, dry sake complements light white fish, while a sake with a rich umami profile enhances the flavor of oilier fish, elevating the deliciousness of both. Our staff is well-versed in pairing food and sake, so please feel free to ask for recommendations if you're unsure. We will suggest the perfect bottle to match your preferences and support your ultimate dining experience.

For lovers of seafood, Robata & Sake Uomaru Nagahama is the ideal seafood restaurant Nagahama. Our Today's Special, which changes based on the day's catch, promises new discoveries and delights with every visit.

A Blazing Flame Before Your Eyes! The Captivating Art of Warayaki (Straw-Grilling) That Thrills the Senses

Another of our specialties, and one that fascinates many of our customers, is Warayaki (straw-grilling). The powerful aroma of burning straw and the high-temperature cooking that instantly seals in the ingredients' umami create a live performance that excites all five senses. In particular, our straw-grilled bonito in Nagahama and Omi beef robata grill in Nagahama are signature dishes that represent our restaurant.

Straw-Grilled Bonito Direct from Kochi: The Pinnacle of Aroma and Flavor

Our chefs boldly straw-grill fresh bonito, delivered directly from Kochi, right before your eyes. By searing the surface instantly with the intense flame of the straw, a fragrant aroma envelops the bonito, while the inside remains moist and packed with concentrated umami. The smoky fragrance and melt-in-your-mouth texture of the bonito upon the first bite deliver a感動 that is hard to find elsewhere. The changing fat content of the bonito with the seasons is another one of the delights of warayaki. This exquisite dish, offered at market price, allows you to enjoy the best bonito of the day.

A Luxurious Straw-Grilled Dish Featuring Shiga's Prized Brand, Omi Beef

As an izakaya featuring products from Shiga Prefecture, we take great pride in our straw-grilled Omi beef, one of Japan's top three wagyu brands. Omi beef, known for its fine texture and sweet, melting fat, is cooked over straw flames, which renders off excess fat and infuses the meat with an aroma that further enhances its umami. As you bite into the fragrantly grilled Omi beef, the scent of straw fills your senses, and with each chew, you'll experience the deep, inherent flavor of the meat. You can indulge in this luxurious taste starting from 1,859 yen.

  • A thrilling warayaki performance unfolding right before your eyes
  • Aromatic and flavorful dishes with an appetizing straw-grilled scent
  • A luxurious collaboration of bonito from Kochi and Omi beef from Shiga

Enjoying Seasonal Bounties with the Robata Grill

In addition to warayaki, our robata grill in Nagahama offers a wide variety of seasonal vegetables and seafood. For instance, you can enjoy juicy Kamo eggplant and Manganji peppers in the summer, or thick, meaty mushrooms in the fall. As an izakaya featuring products from Shiga Prefecture, we slowly grill the most delicious seasonal ingredients over a charcoal fire. This gentle cooking process brings out the natural sweetness and aroma of the ingredients, allowing you to enjoy a simple yet profound flavor. Please enjoy the tastes of the season to the fullest, prepared with both warayaki and robata grilling methods.

We offer a rich selection of jizake crafted with care by Shiga's brewers. Enjoying these local flavors alongside Nagahama's seasonal delicacies is a moment of pure bliss.
