Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Nagahama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Nagahama.

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Producers

Tosa-Saga Port, KochiIkkatsu no Daiki

Tano, KochiTanoya Seihachi

A genuine sun-dried salt made using only the sun's heat, with painstaking care. Entirely handmade, it grows into crystals that melt in the mouth, the very finest sun-dried salt.

Welcome to Nagahama City, Shiga Prefecture. In this land rich with history and culture, there is an izakaya where you can fully savor the richness of local cuisine: Robata to Nihonshu Uomaru Nagahama. In addition to its convenient location within walking distance of JR Nagahama Station, the charming Japanese atmosphere of its renovated old building promises a pleasant time for all who visit. What we cherish most are the blessings of our local Shiga and the fresh seafood delivered directly from fishing ports across the country. We invite you to enjoy a variety of exquisite dishes prepared by our skilled chefs, along with a carefully selected range of sake.

When customers find us by searching for a local Shiga izakaya, we know they won't be satisfied with just knowing that we use local ingredients. They want to come with a clear picture of how those ingredients are brought to life and what kind of surprises and delights they can expect. This article will detail how 'Robata to Nihonshu Uomaru Nagahama' fuses Shiga's ingredients with treasures from the sea to provide an unforgettable dining experience.

Exquisite Cuisine Woven from Shiga's Bounty and Ocean Treasures: The Essence of a Local Shiga Izakaya

Our acclaimed dishes are a harmony woven from the rich bounty of local Shiga and fresh seafood delivered from fishing ports nationwide. We are meticulous about our cooking methods to maximize the inherent umami of each ingredient.

  • Savor Shiga's Prized Omi Beef, Straw-Grilled to Perfection

Shiga's brand-name beef, Omi Beef, is characterized by its fine texture and the melt-in-your-mouth umami of its fat. We serve this Omi beef using our specialty straw-grilling (warayaki) method. Grilled right before your eyes, the straw fire sears the surface of the meat in an instant at high temperatures, imparting a fragrant aroma while sealing in the meat's natural juices.

One bite will fill your mouth with the aroma of straw and the rich flavor of Omi beef, offering a moment of pure bliss. The Straw-Grilled Omi Beef starts from 1,859 yen. As a local Shiga izakaya, this is a masterpiece we highly recommend you try.

  • The Art of Tsukuri: The Beauty of Fresh Fish Direct from the Port

You might wonder how it's possible to enjoy such fresh seafood in Nagahama, a place far from the sea. The secret lies in the fresh fish delivered daily from fishing ports across the country. Our experienced chefs carefully select, prepare, and serve it as tsukuri (sashimi) to bring out the best of the ingredients.

In particular, the fatty Buri Harami no Tsukuri (Yellowtail Belly Sashimi) is 880 yen. Its melting texture and deep umami are a concentrated taste of the ocean's bounty. Our Sashimi of Fresh Fish Direct from the Port might offer a new discovery with each visit, featuring the catch of the day. Please ask our staff about the daily recommendations.

  • Straw-Grilled Bonito from Kochi: A Spectacular Live Performance Before Your Eyes

Another of our specialties, the Straw-Grilled Bonito from Kochi, captivates with the live cooking performance right before your eyes. Fresh bonito, sent directly from Kochi, is straw-grilled with a dramatic flair that resembles a dance of flames. By searing it instantly over a high-temperature flame, the bonito's surface becomes fragrant and crispy, while the inside remains perfectly moist.

The savory aroma of the straw fills the air, further whetting your appetite. The fragrant scent and concentrated umami of the bonito will surely be an experience you won't find elsewhere. The Straw-Grilled Bonito from Kochi is available at market price, so please enjoy the best flavor of the season.

A Memorable Time at a Local Shiga Izakaya: The Charm of 'Uomaru Nagahama' Through Customer Reviews

We have received many kind words from our customers regarding our food, atmosphere, and service. Here are a few customer reviews to show you how the charm of our restaurant is perceived.

  • Great Atmosphere, and We Enjoyed Lots of Shiga-Grown Food

I went on a Sunday🙋‍♀️ The atmosphere was great, and we had drinks at the counter🍻 We ate a lot of local Shiga products😋 The chopstick sleeve was an omikuji, and when I drew it, I got '😍Daikichi' (Great Luck) and a free drink✨ The food was delicious, which made the drinks go down smoothly🍸 The restrooms were on the second floor🚻 The staff was friendly and easy to talk to, making it a place I'd want to come back to (^^)

This customer praised the great atmosphere, the abundance of ingredients as a local Shiga izakaya, and their delight with our unique omikuji service. We are grateful that they also enjoyed interacting with our staff, which shows we are achieving our goal of being a place you'll want to come back to.

  • All the Dishes Were Delicious. The Staff Was Great, and the Food Was Wonderful

The fresh fish was incredibly delicious when I visited before, so this time I came for the course pictured. All the dishes were delicious. The burdock tempura was also tasty. However, the seasoned rice was a bit too strongly flavored, which was a little disappointing. The staff was very attentive, and the food was wonderful. Overall, I would like to visit again. Reservations are a must on weekends. No parking, but there's a coin parking lot nearby. Credit cards, PayPay, and other payments accepted.

We are honored to receive such high praise for the taste of our food, especially the fresh fish. It's also clear that our staff's attentive service contributed to the customer's satisfaction. We are pleased that we could provide a highly satisfying meal, with even our side dishes like the burdock tempura being noted. We will use this feedback to improve our services in the future.

  • It's the Kind of Place You'll Want to Come Back To

I believe there's another branch of this local izakaya near Hikone Station. This one is just a few minutes' walk from Nagahama Station. I dropped in without a reservation, but since it was still early, I was able to get in right away. It seems they operate out of a renovated old building, which creates a very charming space. I was shown to the second floor, which had a relaxing atmosphere. The otoshi (appetizer) was cucumber. I had smoked pickled edamame, a daikon radish salad with fried yuba and shirasu, and the 'best croquette in Japan.' It was a nice, calm place to drink.

I came again for a company drinking party. The previous course wasn't to my liking, so this time I ordered a la carte. Huh?? It was delicious.... When ordering a la carte, everything that came out was amazing. The food arrived reasonably quickly after ordering. The staff was also energetic. The restaurant is lively and bustling, which might not be for everyone, but they show large groups to private rooms.

Receiving comments like a place you'll want to come back to from multiple customers is the highest compliment for us. We've realized that the high praise for our a la carte menu, the speed of service, and our energetic staff all contribute to our customers' comfort. We will continue to be a restaurant that customers want to visit again and again for various occasions.
