Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

More Than Just Another Izakaya: Our Serious Approach to Sourcing Ingredients

When dining out, do you ever find yourself wondering, Is this fish truly fresh? or How was this meat raised? It can be difficult to discern the sincerity behind the flashy words on a menu. The term Nagahama Izakaya itself covers a wide variety of quality and experiences. We believe in not just serving a dish, but also conveying the story behind it to our customers.

We want your time at Robata & Sake Uomaru Nagahama to be more than just a meal; we want it to be a special, memorable experience. To achieve this, the ingredients must be the star. We believe that an approach that seeks out only the very best, rather than relying on standardized suppliers, leads to our customers' genuine satisfaction. For example, while many claim to source direct from the fishing port, the types and cuts of fish we procure change drastically depending on the day's catch and condition. We spare no effort in our continuous pursuit of the finest ingredients of the moment.

In this article, we will specifically introduce how our daily commitment to ingredients enriches your table and creates unforgettable moments. We are confident that this dedication is the reason Robata & Sake Uomaru Nagahama is chosen, and that it is the answer to the truly delicious experience you are seeking.

The Uomaru Experience: A Symphony of Senses Born from Culinary Dedication

To ensure our guests feel truly glad they came, we offer a culinary experience that stimulates all five senses. Here, we unveil the secrets behind what makes our Nagahama seafood and Nagahama sake so special.

The Pure Umami of the Ocean: Fresh Fish Directly from the Port

For those seeking the best Nagahama seafood, the first thing we want you to taste is our fresh fish delivered directly from the fishing port. Our chefs discern the best fish of the day and carefully prepare it as tsukuri (sashimi) to draw out the maximum umami each fish possesses. Our uncompromising commitment to freshness is something you can taste for yourself.

  • An Unwavering Pursuit of Freshness: Fish arriving directly from the port is exceptional in its firmness, transparency, and melt-in-your-mouth texture. We deliver the pure, unadulterated taste of the ocean's bounty—a flavor impossible to achieve with frozen or less-fresh fish.

  • The Skill of Master Chefs: Our seasoned chefs identify the unique characteristics of each fish, maximizing its potential. Every single slice is prepared with care to be both beautiful and delicious. Our Buri Harami no Tsukuri (Yellowtail Belly Sashimi) features fatty yellowtail belly, expertly sliced to deliver a melting texture and rich umami. For 880 yen per slice, you can enjoy unparalleled freshness and craftsmanship.

  • The Best of Nagahama Station Seafood: Being able to savor seafood so fresh it feels like you're at the port, all while conveniently located near Nagahama Station, is one of our greatest attractions. The rich aroma of the sea and the profound flavors that fill your mouth will surely create a special and fulfilling experience.

Flames Leap Before Your Eyes: The Ultimate Dish, Fragrant with Straw-Grilled Perfection

Our Straw-Grilled Bonito in Nagahama and Straw-Grilled Omi Beef in Nagahama are signature dishes that define our restaurant. Fresh bonito from Kochi and Shiga's prized Omi beef are masterfully straw-grilled right before your eyes. This dynamic cooking method maximizes the ingredients' umami.

  • The Magic of Straw-Grilling: The intense flame of the straw instantly sears the surface of the food, imparting a unique, smoky aroma. This rapid cooking process locks in the bonito's umami and accentuates the rich flavor and tenderness of the Omi beef. Our Straw-Grilled Omi Beef is available from 1,859 yen, and we invite you to experience its powerful aroma and flavor.

  • A Live Performance for the Senses: Take a seat at our vibrant counter to witness the spectacle of leaping flames up close. The sizzling sound, the rising fragrant smoke, and the piping hot dish served fresh from the fire—it's a culinary experience you can enjoy not just with your taste buds, but with your eyes and nose as well. It is, in essence, entertainment for all five senses.

  • Maximizing Each Ingredient's Character: For the bonito from Kochi, the straw aroma enhances the fish's inherent, powerful umami. For the Omi beef from Shiga, straw-grilling renders excess fat, highlighting the meat's deep, savory flavor and smoky fragrance. It is the optimal cooking method to bring out the best in each ingredient.

A Perfect Pairing: Discovering Carefully Selected Sake

Delicious food demands delicious drinks. To let you fully experience the charm of Nagahama sake, we offer a rich selection of carefully chosen sake from all over Japan. Of course, we also feature local Shiga sake, allowing you to enjoy the region's blessings in both your food and drink.

  • A Curated Collection of Fine Sake: We offer a wide variety of sake, from dry to sweet, starting at 500 yen. You can enjoy pairings that bring out the best in each dish, such as a crisp, dry sake with our fresh sashimi or a full-bodied, umami-rich type with our straw-grilled specialties.

  • The Joy of New Discoveries: Even if you're not a sake expert, feel free to ask our staff for recommendations. We will suggest the perfect glass to match your preferences and your meal. We also recommend a Sake Tasting in Nagahama to discover new favorites. You can experience the deep world of sake by tasting how the flavor of the same brand changes with temperature.

  • An Encounter with Shiga's Local Sake: We have a large selection of local sake nurtured by the rich nature of Shiga. Savoring local ingredients alongside local sake in the historic streets of Nagahama will surely deepen your appreciation for the charms of the region.

An Atmosphere Steeped in History: Perfect for Any Occasion

In addition to our commitment to ingredients, we also pay close attention to the space where our guests spend their time. For those looking for an Izakaya with Private Rooms in Nagahama, we offer relaxing private rooms suitable for a variety of occasions.

  • A Charming Japanese Atmosphere: Our restaurant, a renovated old building, exudes a calm, nostalgic Japanese ambiance. The warmth of the wood grain and the soft glow of indirect lighting create a space where time seems to slow down, allowing you to forget the hustle and bustle of daily life and enjoy a tranquil moment.

  • A Choice of Seating: For those who enjoy a lively atmosphere and want to see the chefs in action, our vibrant counter seats are the perfect choice to experience the unique thrill of a counter-style izakaya in Nagahama.
