Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Producers

Is Sake Pairing Difficult? Uomaru Nagahama Has the Solution

When you hear sake pairing, you might think it sounds difficult or requires special knowledge. It's true that there is an immense variety of sake, each with its own unique aroma, flavor, and texture. You might struggle to decide which sake goes with which dish. Even with wonderful dishes like Nagahama seafood or Omi beef robata-yaki in Nagahama in front of you, simply drinking a sake you happen to like might mean you're not experiencing its full potential.

But rest assured, at Robata to Nihonshu Uomaru Nagahama, we have various ways to support even those unfamiliar with sake, ensuring you can fully enjoy the pairings with your meal. For instance, our signature dishes, like the Straw-Grilled Bonito Direct from Kochi and Straw-Grilled Shiga Omi Beef, each have a perfect sake counterpart. Discovering these combinations will bring new revelations and excitement with every bite.

Common Questions About Choosing Sake

  • There are too many types of sake; I don't know which one to choose.

  • I want to know the best sake pairing that won't spoil the taste of the food.

  • Chilled, room temperature, or warmed... I don't know how to choose based on temperature.

These are not unusual questions; they are common concerns for many of our customers. We are dedicated to providing careful guidance so that every guest can enrich their dining experience at Uomaru Nagahama.

Uomaru Nagahama's Specialties and the Basics of Sake Pairing

The combinations of our dishes and sake offer endless enjoyment. Pairings with our specialty dishes are something we highly recommend trying.

The Encounter of Straw-Grilled Dishes and Sake

Straw-Grilled Bonito Direct from Kochi (Market Price)

This exquisite dish features fresh bonito sent directly from Kochi, straw-grilled with flair right before your eyes. The smoky aroma of the straw enhances the umami of the bonito. For this powerful flavor, we recommend a Junmai sake with a subtle aroma but a solid rice umami, or a dry Junmai Ginjo with a sharp, crisp finish. The crispness of the sake complements the smokiness of the straw-grilled bonito, leaving a clean aftertaste.

Straw-Grilled Shiga Omi Beef (From 1,859 JPY)

A dish that concentrates the natural umami and smoky flavor of Shiga's proud brand, Omi beef, by straw-grilling it. The rich fat and deep umami of Omi beef pair exceptionally well with a Junmai Daiginjo with a rich aroma and body, or a full-bodied Yamahai-仕込み Junmai sake. The rice umami of the sake harmonizes beautifully with the sweetness of the Omi beef, delivering a luxurious, melt-in-your-mouth experience. An aged koshu (old sake) can also be an interesting pairing for such a robust meat dish.

The Delicate Harmony of Fresh Sashimi and Sake

Sashimi of Fresh Fish Direct from the Port (Yellowtail Belly Sashimi: 880 JPY)

The true essence of Nagahama seafood can be tasted in our sashimi, made with fresh fish direct from the port. The Yellowtail Belly Sashimi, in particular, is known for its melty texture and rich umami flavor. For such delicate seafood, a light and fruity Ginjo sake or a chilled, crisp Junmai Ginjo is ideal, as they won't overpower the fish's flavor. The clear taste of the sake enhances the natural umami of the fish and refreshes the palate. Furthermore, combining fresh Shiga robata-yaki seafood with local sake is truly the epitome of Nagahama's culinary culture.

Seasonal Robata-yaki and the Seasonality of Sake

We also offer seasonal robata-yaki that highlights the best ingredients of the moment. For example, pairing seasonal ingredients like spring mountain vegetables, summer ayu sweetfish, autumn mushrooms, or winter crab with sake that matches the season creates an even deeper experience. It's a joy to find the perfect combination for each time of year, considering both the type and temperature: light shinshu (new sake) in spring, refreshing namazake (unpasteurized sake) or sparkling sake in summer, aged hiyaoroshi in autumn, and warm kanzake in winter.

How to Choose Sake: A Guide by Type and How to Enjoy it at Uomaru Nagahama

The world of sake is profound and diverse. However, simply knowing the basic classifications can greatly expand your enjoyment of pairing. Here are some tips for finding your favorite bottle from the extensive lineup at Robata to Nihonshu Uomaru Nagahama.

Basic Classifications of Sake

  1. Junmai-shu: Sake made only from rice, rice koji, and water. It features the natural umami and richness of the rice, making it a versatile type that pairs well with various dishes. It goes particularly well with strongly flavored dishes or smoky ones like our straw-grilled specialties.

  2. Ginjo-shu / Daiginjo-shu: Sake made from highly polished rice (with a high rice-polishing ratio) and fermented slowly at low temperatures. It is characterized by its gorgeous, fruity aroma. The fragrant Daiginjo pairs well with delicate dishes that highlight the ingredients' natural flavors, such as fresh sashimi.

  3. Honjozo-shu: Sake made from rice, rice koji, water, and a small amount of brewer's alcohol. It has a clean, light flavor and is an easy-to-drink type that is perfect as a table sake during meals.

In addition to these, there are many other types of sake with unique characteristics, such as namazake (unpasteurized), genshu (undiluted), koshu (aged), and nigorizake (cloudy). At Robata to Nihonshu Uomaru Nagahama, we offer these diverse sakes at a wide price range, with Selected Sake from 500 JPY, and we also have options for those who want to enjoy a sake tasting flight in Nagahama.

The Appeal of Focusing on Shiga's Local Sake

At our restaurant, we not only offer carefully selected sake from all over the country but also feature a rich selection of local Shiga sake. As a Shiga Prefecture izakaya, combining local ingredients with local sake allows you to experience the region's unique food culture on a deeper level. Shiga's local sake, nurtured by the blessings of Lake Biwa and its rich nature, has a distinctive and appealing taste. Sake brewed with local rice and water creates the ultimate pairing with Shiga's ingredients, such as Omi beef and the bounty of Lake Biwa. Savoring the local flavors amidst the historic townscape of Nagahama is sure to become an unforgettable memory.

Tips for Sake Pairing: An Experience for All Five Senses

Sake pairing is about more than just matching or not matching. By fully engaging all five senses, the experience becomes exponentially deeper. Here are some tips to make your experience at Robata to Nihonshu Uomaru Nagahama even richer.

The Balance of Aroma, Flavor, and Texture

  • Aroma Compatibility: Do the aromas of the food and sake complement or interfere with each other? For example, the smokiness of straw-grilled dishes pairs well with the aged aroma or rice umami notes of sake. On the other hand, the delicate aroma of fresh fish is gently accompanied by the bright, fruity aroma of a Ginjo sake.

  • Flavor Compatibility: Balance the sweetness, spiciness, acidity, umami, and bitterness of the food with the sake. If the dish has a strong flavor, choose a sake that is equally robust. If the dish is delicate, select a delicate sake. Our Party Courses from 5,000 JPY feature a variety of dishes, allowing you to enjoy a diverse lineup of sake.

  • Texture Compatibility: Consider how the smoothness, richness, or crispness of the sake affects the texture and mouthfeel of the food. For example, a crisp, clean sake can cut through the richness of a fatty dish, cleansing the palate and inviting the next bite.

Enjoying the Changes with Temperature

Sake is a drink whose character changes dramatically with temperature. Chilled, room temperature, and warmed—the same sake will have different aromas and flavors at each temperature, altering its compatibility with food.

  1. Chilled (Reishu): Becomes crisp and light, with a more pronounced aroma. It pairs well mainly with Ginjo and Daiginjo sake and lightly flavored dishes.

  2. Room Temperature (Jo-on): This is when the natural umami and richness of the rice are most apparent. It can be enjoyed with a wide range of dishes and sakes, such as Junmai.

  3. Warmed (Kanzake): Warming opens up the aroma and emphasizes the umami and sweetness of the rice. It is an excellent match for Junmai and Honjozo sakes, as well as stews, hot pots, and strongly flavored dishes.

The charming Japanese space in a renovated old building at Robata to Nihonshu Uomaru Nagahama is part of the dining experience that stimulates all five senses. Whether watching the chefs' skills up close from the lively counter seats or relaxing in a private room for seafood dining in Nagahama, please enjoy sake at the optimal temperature to match your mood and meal.
