Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

03

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Producers

We also offer a fun, playful touch: our chopstick wrappers are 'omikuji' (fortune slips), and if you draw 'Great Fortune,' your first drink is on us.

In this article, we'll introduce the charms of our restaurant and provide all the information you need to make a smooth 'Uomaru Nagahama reservation' for the best possible experience. We look forward to helping you create lasting memories in Nagahama.

Ensure a Satisfying Experience with a 'Uomaru Nagahama Reservation': Don't Miss Out on the Flavors of Nagahama

Thanks to our prime location and the quality of our cuisine, our restaurant is often bustling, especially on weekends, holidays, and during dinner hours. We want every guest who makes the trip to Nagahama to fully enjoy our food and atmosphere. That's why making a 'Uomaru Nagahama reservation' is the key to ensuring your ideal visit.

Securing Your Spot on Busy Weekends and for Popular Seating

We anticipate being particularly busy on Friday and Saturday nights, as well as during long holiday weekends. Whether you wish to sip a drink at the lively counter while watching our chefs at work, or prefer to spend quality time in a quiet private room with someone special, we understand that every guest has their ideal way to dine. By booking in advance, you can secure your preferred seating and begin your meal smoothly without worrying about wait times.

Excellent Location, Just a 5-Minute Walk from JR Nagahama Station's East Exit

Our restaurant is situated in an incredibly accessible location, just a 5-minute walk from the East Exit of JR Nagahama Station. This makes it extremely convenient for both tourists visiting Nagahama and local customers. Its proximity to the station makes it an easy stop after work or at the end of a day of sightseeing. However, due to this convenience, we may not be able to seat walk-in guests during busy times. For larger groups, such as family gatherings or company parties, an advance 'Uomaru Nagahama reservation' is essential.

Fresh Fish from the Port and Nagahama's Bounty: The Uomaru Commitment

What we want to offer our guests is not just delicious food, but dishes that convey the story behind their ingredients. Our passion lies in serving the finest seafood and local Shiga specialties here in Nagahama, and our commitment to quality ingredients is the foundation of our cuisine.

Exquisite 'Sashimi' Showcasing Masterful Skill

The true essence of our seafood cuisine is undoubtedly our 'sashimi.' Fresh fish is delivered directly from fishing ports across Japan, and our skilled chefs carefully slice each piece to perfection, assessing the best condition of the day's catch. For example, our sashimi of fatty seasonal yellowtail belly melts in your mouth with a rich, deep flavor. We make no compromises in bringing out the natural sweetness and texture of the freshest seafood. You can savor the bounty of the ocean from the very first bite.

Omi Beef, Raised on the Rich Lands of Shiga

In addition to seafood, we are proud to serve another of Shiga's treasures: Omi beef. Raised in a lush natural environment, Shiga's Omi beef is characterized by its fine texture and sweet, meltingly tender fat. We cook this premium beef using the ancient method of straw-grilling, right before your eyes. The fragrant aroma of the straw enhances the meat's savory flavor, creating an unforgettable dish. Along with our Shiga Robatayaki Seafood, be sure to enjoy this exquisite meat dish born from Shiga's rich land.

Despite our prime location in front of Nagahama Station, our commitment to carefully selected ingredients never wavers. We promise to set a new standard for seafood dining near Nagahama Station and deliver the ultimate culinary experience to our guests.

A Fiery Performance Before Your Eyes: The Allure of Our Famous 'Warayaki' Straw-Grilling

One of the greatest attractions of our cuisine is the spectacular performance of 'warayaki' (straw-grilling) that unfolds right before you. Watching us instantly grill bonito from Kochi and Omi beef from Shiga in towering flames is a special experience that will stimulate all five of your senses.

Savor 'Straw-Grilled Bonito' with All Five Senses

Our fresh bonito, delivered directly from Kochi, is one of our signature dishes. By searing it instantly in the straw flames, the surface becomes fragrant while the inside remains moist and rare. The unique, rich aroma of the straw enhances the bonito's umami, and you'll be amazed by the depth of flavor in every bite. This straw-grilled bonito from Kochi, which elevates the freshness of the ingredient through technique, is a true specialty you can only experience here. While the price is 'market price' and varies with the day's catch, it is well worth it.

Enjoying Seasonal Delicacies with Robatayaki

In addition to straw-grilling, we also offer 'seasonal robatayaki.' Seasonal vegetables and seafood are slowly grilled over the hot hearth to bring out their natural flavors to the fullest. This simple yet profound cooking style allows you to enjoy the ingredients themselves in a way that is distinct from straw-grilling. Our robatayaki, delicious with seafood and showcasing seasonal flavors, conveys the diverse appeal of Shiga Robatayaki Seafood. Please feel free to ask our staff for the day's recommendations.

The Joy of 'Sake Tasting in Nagahama': Specially Selected Sake from Across Japan and Local Brews to Complement Your Meal

Delicious food is incomplete without a wonderful drink to accompany it. At our restaurant, we offer a rich selection of carefully chosen sake from across Japan, as well as local Shiga brews, to further enhance the flavors of our signature seafood and straw-grilled dishes. We invite you to explore the theme of 'Sake Tasting in Nagahama' and find your perfect match.

Find Your Perfect Glass from Our Extensive Lineup

Our sake selection is extensive, ranging from dry to sweet and from junmai to ginjo. Our knowledgeable staff is well-versed in the characteristics of each sake and can recommend the best pairings for your meal, so please don't hesitate to ask. For example, we might suggest a crisp, dry junmai to go with the straw-grilled bonito, or a fragrant ginjo to pair with delicate sashimi. We will help you find the perfect bottle to suit your tastes. Even if you're new to sake, you're sure to find a new favorite here.

Discovering Seasonal and Limited-Edition Sake

In addition to our regular lineup, we also feature special, limited-edition seasonal sake. Discovering fresh 'shinshu' in spring, refreshing 'natsu-zake' in summer, mellow 'hiyaoroshi' in autumn, and brands perfect for warming in winter is part of the fun. We invite you to enjoy pairing these special seasonal brews with our seasonal ingredients, feeling the changing of the seasons. This is a chance to experience the true depth of Sake Tasting in Nagahama.

Sake is available starting from 500 yen per glass, making it easy to sample a variety of types. We also have an abundance of local Shiga sake, so be sure to try the unique flavors of our region.

A Little Fun with Every Visit: The 'Omikuji Chopstick Wrapper'

We also offer a unique service designed to bring a smile and a little surprise to our guests. The chopstick wrappers provided with your meal are actually 'omikuji' (paper fortunes). If you draw 'Daikichi' (Great Fortune), you'll receive one drink on the house! This little test of luck during your meal can spark conversation and make your time with us even more memorable.
