Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

Sake & Local Brews

A generous selection of sake chosen from across Japan, including local Shiga brews — from dry to sweet. Our staff suggest the one glass that suits your dish, so you can enjoy sake tasting in Nagahama.

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Nagahama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Nagahama.

05

Private Rooms & Banquets

Relaxing private rooms, banquet courses with free-flow drinks, and full-venue bookings on request. Steps from Nagahama Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Many of you are likely searching for a Nagahama izakaya that offers not just great taste, but a truly special and memorable experience.

To all of you, we'd like to introduce Robata & Japanese Sake Uomaru Nagahama Branch, conveniently located in the heart of Nagahama and within walking distance of JR Nagahama Station. Our restaurant is a prime example of a Nagahama izakaya, offering exquisite dishes that elevate carefully selected treasures from the sea and mountains with expert craftsmanship, all served with fine sake from across the country in a charming Japanese space created from a renovated old building. Today, we'll introduce the appeal of our restaurant, which delivers an experience exceeding all expectations, focusing on our Chef's Recommended Course that encapsulates our charm.

Here you'll find all the information you need to stage the perfect evening, eliminating any hesitation in choosing a Nagahama izakaya. From solo dining and dates with someone special to family meals and company banquets, we welcome you with meticulous hospitality to ensure satisfaction for any occasion.

No More Indecision at a Nagahama izakaya! Uomaru's Blissful Course Experience

If you're visiting Nagahama, you'll want to fully savor the unique local flavors. However, izakaya menus are extensive, and it can be hard to decide what to order. That's the perfect time to consider our Chef's Recommended Course. This course is the true essence of Robata & Japanese Sake Uomaru Nagahama Branch, featuring a well-balanced combination of our specialty dishes and seasonal delicacies, with a story behind each plate.

  • A variety of dishes bursting with seasonality, making the most of fresh ingredients.
  • A comprehensive lineup of our signature dishes, like our proud straw-grilled items and sashimi from fish delivered directly from the port.
  • Sake pairing suggestions thoughtfully designed to complement the dishes.

Our course meals not only allow you to effortlessly enjoy the concentrated charm of our restaurant but are also designed so that even first-time visitors can relax and immerse themselves in our culinary world. In particular, our banquet courses with all-you-can-drink options start from 5,000 yen and are very popular with organizers of company parties and various gatherings.

A Luxurious Taste of Sea and Mountain Delicacies in Our Courses

The core of our course menu is, without a doubt, our fresh fish direct from the port and local Shiga ingredients. The incredibly fresh seafood, delivered directly from fishing ports across Japan, is prepared as sashimi by our skilled chefs in the most delicious way possible for that day. The firm texture, the melt-in-your-mouth umami of the fat, the scent of the sea that fills your mouth... these are flavors that can only be brought out by chefs who know fresh fish inside and out.

Another specialty of ours is the straw-grilling (warayaki) of Shiga's prized Omi beef and fresh bonito delivered directly from Kochi, dynamically grilled right before your eyes. The straw flames instantly sear the surface of the ingredients, imparting a fragrant aroma while sealing in the umami. As a representative of robatayaki Nagahama, this dynamic cooking method provides a culinary experience that can be enjoyed with all five senses.

A Nationwide Selection of Japanese and Local Sake to Enhance Your Meal

Delicious food is incomplete without delicious sake. At our restaurant, we have a rich selection of carefully chosen Japanese sake from all over the country, as well as local Shiga sake. We will suggest the perfect glass for you based on your preferences and what pairs well with each dish. For example, pairing fatty sashimi with a crisp, dry sake, or the fragrant straw-grilled dishes with a sake that has a rich umami, enhances the flavors of both. Being able to fully enjoy Japanese sake Nagahama is another of our restaurant's major attractions.

  • For the Yellowtail Belly Sashimi (880 yen), a crisp, dry local sake.
  • For the Straw-Grilled Shiga Omi Beef (from 1,859 yen), a junmai sake rich in rice umami.
  • For the Straw-Grilled Bonito Direct from Kochi (market price), a ginjo sake with a rich aroma.

If you're unsure about which sake to choose, please don't hesitate to ask our staff. We will be happy to guide you to the perfect drink to match your mood and your meal.

The Thrill of Robatayaki and the Allure of Fresh Fish: Savoring Nagahama's Bounties to Your Heart's Content

While our Chef's Recommended Course is a condensed showcase of Nagahama's charm, each individual dish is crafted with deep care. In particular, the straw-grilling with flames dancing before your eyes and the sashimi of fish direct from the port prepared by our master chefs are two specialties we highly recommend experiencing as part of a course.

The Live Experience of Straw-Grilling Right Before Your Eyes

If you sit at the counter, you can watch as bonito from Kochi and Omi beef from Shiga are dynamically straw-grilled over rising flames. This live performance is one of the true pleasures of our robatayaki Nagahama. The unique aroma of the straw infuses the ingredients, leaving the outside fragrant and the inside plump and juicy. By featuring this straw-grilling as a main part of the course, we deliver an感動 that touches all your senses: sight, smell, and taste.

The smoky fragrance of straw-grilled food pairs exceptionally well with Japanese sake. We especially recommend choosing a sake with a spreading aroma to further enjoy the flavor of the straw-grilled bonito.

Fresh Fish Direct from the Port, Selected by Expert Chefs

At Robata & Japanese Sake Uomaru Nagahama Branch, we source the freshest fish in the best condition at any given time, direct from fishing ports across Japan. As a point of pride for our seafood restaurant Nagahama, our skilled chefs carefully inspect each and every fish to maintain its peak freshness.

The sashimi of fish direct from the port included in our courses showcases the chef's skill in bringing out the natural flavors of the ingredients. For example, our Yellowtail Belly Sashimi (880 yen) is characterized by its melt-in-your-mouth texture and rich umami. In our courses, we serve the most seasonal fish based on the day's catch, so you might discover something new each time you visit. The combination of fresh seafood and select Japanese sake promises a moment of pure bliss.
