Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Nagahama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Nagahama.

05

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

A Worry-Free Dining Experience at a Shiga Izakaya: Our Commitment to Allergy Awareness

Creating a Table Where Everyone Smiles at an Izakaya with Shiga Ingredients

Do you ever hesitate to dine out because of concerns about food allergies, even though you truly want to enjoy the experience? Especially at an izakaya, where the flavor of the ingredients is key, you might worry about what's being used and how it's prepared. We strive every day to ensure that each and every one of our guests can savor delicious food and drinks with peace of mind, enjoying their special time to the fullest.

Located within walking distance of JR Nagahama Station, Robata & Sake Uomaru Nagahama is an inviting Japanese space set in a renovated old building. We specialize in fresh fish delivered directly from the fishing port and Omi beef from Shiga Prefecture. Paired with carefully selected sake from across Japan and local Shiga brews, we are a Shiga-sourced izakaya where you can fully appreciate the culinary richness of Nagahama. From lively counter seats to relaxing private rooms, we cater to a wide range of occasions, including solo dining, dates, family meals, and company banquets.

In this column, we will explain our philosophy and the services we offer at Robata & Sake Uomaru Nagahama to help guests with allergies dine with confidence. We hope this information helps enrich your dining experience and serves as a useful guide before your visit.

Easing Allergy Concerns When Dining Out

The Importance of Prioritizing Customer Safety

In recent years, the number of customers with food allergies has been increasing, and addressing this has become a critical issue for the restaurant industry. Particularly with izakaya menus, which combine a variety of ingredients, there is a risk of unintentional allergen inclusion. For customers, knowing that an establishment provides a safe dining environment is a major factor in their choice of restaurant.

Our top priority is to ensure that the food we serve is not only delicious but also safe for you to enjoy with peace of mind. Many of our dishes highlight the natural goodness of the ingredients themselves—such as sashimi prepared by skilled chefs using fish straight from the port, or our straw-grilled bonito from Kochi and Shiga-sourced Omi beef, cooked right before your eyes. That's why we pay special attention to the origin and quality of all our ingredients.

To alleviate our customers' allergy concerns and allow them to fully enjoy our cuisine and sake, we value open communication and strive to be as accommodating as possible. In the next section, we will introduce the specific measures we take to ensure you can safely experience the charm of our Shiga-sourced izakaya.

Robata & Sake Uomaru Nagahama's Commitment to Safety

At Robata & Sake Uomaru Nagahama, we take several steps to ensure that guests can enjoy their meals without worrying about allergies. While we do not have a specific allergen-free menu, we support our customers' peace of mind through our fresh ingredients, expert preparation by skilled chefs, and attentive customer service.

The Peace of Mind That Comes from Exceptionally Fresh Ingredients

The foundation of our cuisine is, above all, fresh ingredients. Fresh fish from the port is delivered to Nagahama the same day and prepared to perfection as sashimi by our skilled chefs. We also carefully select ingredients with clear origins, such as the pride of Shiga Prefecture, Omi beef, and bonito brought directly from Kochi.

  • Transparency of Origin: Knowing where our food comes from is a source of reassurance for our customers. By being clear about the background of our ingredients, we aim to build trust.
  • Dishes Highlighting Seasonal Ingredients: By serving seasonal ingredients, often prepared on our robata grill, we avoid excessive processing and bring out the food's natural flavor. This simple approach helps minimize potential allergens.
  • Pairing with Carefully Selected Sake: Our selection of sake from across Japan and local Shiga brews deepens the flavor of our dishes. Please feel free to ask our staff about the ingredients in our sake as well.

Expert Craftsmanship and Thoughtful Cooking

Another of our specialties is warayaki (straw-grilling), where we grill Kochi bonito and Shiga-sourced Omi beef over a dramatic flame right in front of you. Watching our skilled chefs expertly grill each item is a feast for the eyes. This cooking environment also plays an important role in enhancing a sense of security regarding allergies.

  • Cooking in Plain Sight: From the counter seats, you can watch the flames of the warayaki grill rise and see our chefs' deft knife skills as they handle the fresh fish. This allows you to get a clearer picture of the ingredients and cooking process, and you can ask questions on the spot.
  • Simple Cooking Methods that Emphasize Ingredients: Robata grilling and sashimi are central to our menu, focusing on simple methods that let the ingredients shine. This reduces the use of complex seasonings and additives, making it more likely that guests with allergies can dine safely.
  • A Willingness to Meet Individual Needs: Our staff values the dining experience of each and every guest. If you have concerns about a specific ingredient, please do not hesitate to let us know. We will do our best to accommodate your needs.

Communication is Key: Detailed Service in Our Private Rooms

The most crucial element in handling allergies when dining out is close communication between the customer and the restaurant. At Robata & Sake Uomaru Nagahama, we have created an environment that facilitates this communication.

  • Attentive Consultation with Japanese-Speaking Staff: Our Japanese-speaking staff are available to handle detailed consultations about allergies, so you can discuss your concerns with confidence. We will carefully listen to your questions and help you choose your menu items without worry.
  • Private Rooms for Easy Consultation: We offer private rooms with a calm atmosphere. These spaces are ideal for discussing specific allergy needs without worrying about other guests. As an izakaya for private parties and banquets in Nagahama, our private rooms are very popular for family gatherings and company events.
  • Sharing Information in Advance for a Smoother Experience: By letting us know about any allergies when you make your reservation, we can prepare more smoothly and in greater detail. We kindly ask for your cooperation to ensure a safe meal.

Practical Steps to Take Before Your Visit Regarding Allergies

To enjoy the flavors of our Shiga-sourced izakaya at Robata & Sake Uomaru Nagahama without worry, we recommend taking a few steps before your visit. This will help us provide you with a safer and more comfortable dining experience.

Ensure a Smooth Visit with Prior Consultation When Booking

Informing us about any allergies when you make a reservation is the most reliable way to ensure we can accommodate you. When you provide us with detailed information in advance, we can prepare according to your needs.

  1. Inquire by Phone: When making a reservation, please call us directly at 0749-63-6688 to inform us about the type of allergy and specific ingredients. Our staff will listen carefully and do their best to assist you.
  2. Check Information on Official and Gourmet Websites: You can also refer to our official website or sites like Gurunavi and Tabelog. If the reservation form has a field for allergies, please fill it in there.
  3. Be Specific About Allergies and Ingredients: Instead of just saying I have a XX allergy, it is more helpful to be specific, such as I cannot eat XX (ingredient). This allows for more accurate information sharing. Please also inform us if even trace amounts can cause a reaction or if you are allergic to an ingredient found in specific seasonings.

Reconfirm Upon Arrival

Even if you have provided allergy information with your reservation, reconfirming with our staff upon arrival can provide greater peace of mind.

  • Inform Staff Again After Being Seated: After you are shown to your seat, please mention your allergies to the staff again when you order. It's important to do a final check, as the day's stock or special menu items may have changed.
  • Tips for Choosing from the Menu: As you look at the menu, please don't hesitate to ask our staff about the ingredients in any dishes you are interested in. For dishes where the ingredient's flavor is prominent, like warayaki or robata grill items, it's a good idea to confirm the seasonings used as well.
  • Don't Hesitate to Ask: If you have even the slightest concern, please ask our staff without hesitation. We will provide as much information and support as possible to ensure your peace of mind.

Important Notes for Banquets and Private Parties

As an izakaya for private parties and banquets in Nagahama, Robata & Sake Uomaru Nagahama is a popular choice for company gatherings and other events. For large groups, advance confirmation of allergies is especially important.

  • Share Detailed Information for Large Groups: If you are booking a banquet course, please gather and share the allergy information for all participants in advance. This allows us to smoothly adjust the course content and prepare individual accommodations.
  • Discuss Flexible Course Options: Our banquet courses, which include fresh seafood, warayaki, and seasonal dishes with all-you-can-drink, start from 5,000 yen. Please inquire when booking if it's possible to change the course content or provide alternative dishes to accommodate allergies.
  • Enjoy a Safe Banquet for Large Groups at a Shiga-Sourced Izakaya: We have private rooms where large groups can dine without disturbing others. Our entire staff is ready to provide support so that everyone, including those with allergies, can enjoy the banquet with peace of mind.
