Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

02

03

Seafood & Sashimi

04

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Producers

Tosa-Saga Port, KochiIkkatsu no Daiki

Tano, KochiTanoya Seihachi

What Kind of Satisfaction Comes from Our Commitment to Food at this Nagahama Izakaya?

When choosing a Nagahama izakaya from the many options available, what do you value most? While delicious food is a given, we believe that the freshness and quality of ingredients, along with a sense of security, are crucial points for many customers. You might wonder if you can truly get fresh fish at a seafood restaurant or if the meat is of high quality.

At Robata to Nihonshu Uomaru Nagahama, we make no compromises—from selecting ingredients to our cooking methods and presentation—to meet and exceed those expectations. We believe that providing our customers with the ultimate dining experience is paramount. So, what specific commitments create such a special and satisfying time for our guests? We will answer that question by detailing our approach.

  • A Thorough Pursuit of Origin and Freshness: We carefully select ingredients at their peak, including fresh fish direct from the port, bonito from Kochi, and local Omi beef from Shiga Prefecture.
  • Cooking by Skilled Artisans: Our chefs' techniques shine, from preparing exquisite sashimi to the dynamic straw-grilling that happens right before your eyes, all to maximize the natural flavors of the ingredients.
  • Carefully Selected Sake to Complement Each Dish: We offer an extensive collection of famous brews from across Japan and local Shiga sake to further enrich your dining experience.

The Pride of Our Nagahama Izakaya: Fresh Fish Direct from the Port and Expert Craftsmanship

One of the things we, as a Nagahama izakaya, are most proud to recommend at Uomaru is our incredibly fresh seafood. Our skilled chefs take fish delivered directly from the fishing port and transform it into the finest culinary masterpieces with their expert techniques.

From Port to Table: Sashimi Where Freshness is Everything

We pursue a level of freshness that makes you feel as if the morning's catch has been brought directly to your table. The types of fish sent from the port vary daily, so you may discover a new treasure from the sea each time you visit. Our seasoned chefs expertly handle each fish to bring out its unique characteristics, elevating it into beautifully presented sashimi.

The rich flavor that spreads in your mouth and the melt-in-your-mouth texture are true testaments to its freshness. Our Buri Harami no Tsukuri (Yellowtail Belly Sashimi), known for its tender texture and deep umami, is a particular favorite among our customers. Savoring fresh seafood in its simplest form is the best way to appreciate the true taste of the ingredients.

  • Enjoy a unique encounter with seasonal seafood, as the catch of the day is always changing.
  • Our skilled chefs use delicate knife work to bring out the fish's original umami to its fullest.
  • We often receive praise from customers that our fresh fish is incredibly delicious, making it one of our signature offerings.

Savoring the Depth of Seafood in the Heart of Shiga

The reason you can enjoy such fresh seafood in Shiga, a landlocked prefecture, is thanks to our unique direct sourcing route from fishing ports. We want our customers to fully enjoy the bounty of the sea, delivered from distant ports, right here in Nagahama. Our restaurant lives up to the name seafood restaurant Nagahama with its deep commitment to seafood.

In addition to sashimi, we offer seafood prepared in various ways. From robatayaki grilling that imparts a fragrant aroma to seasonal specialty dishes, you're sure to discover new charms of our fresh fish. We invite all seafood lovers to peruse our extensive menu and find their perfect dish.

A Nagahama Izakaya Specialty that Stimulates the Five Senses: The Straw-Grilling Experience

Another major attraction at Uomaru is our Warayaki (straw-grilling), which is dynamically prepared right before your eyes. The savory aroma of the straw whets the appetite, and the rising flames are a spectacular sight. This cooking method, which stimulates all five senses, is sure to become an unforgettable memory. Known also as a robatayaki Nagahama spot, our straw-grilling features two star ingredients: bonito direct from Kochi and Omi beef from Shiga Prefecture.

Straw-Grilled Bonito Direct from Kochi: A Harmony of Aroma and Flavor

Kochi is renowned as the home of bonito, and we source fresh bonito directly from there to prepare with our signature straw-grilling. This method instantly sears the surface of the bonito, leaving it fragrant and crispy, while the inside remains moist and rare. The rich aroma unique to the straw enhances the bonito's umami, creating a flavor you won't find anywhere else.

Served amidst rising flames and the wafting scent of straw, our straw-grilled bonito is a live performance for the senses, stimulating sight, smell, taste, and even hearing. We highly recommend this dish to first-timers and bonito aficionados alike. It is offered at market price, ensuring you can enjoy the best bonito of the day.

  • We use fresh bonito direct from Kochi, straw-grilled to be aromatic on the outside and juicy on the inside.
  • The straw aroma enhances the bonito's umami, creating a unique flavor.
  • The thrilling experience of watching it being grilled right in front of you enriches your dining experience.

Shiga's Pride, Straw-Grilled Omi Beef: A Luxurious Aroma and Melt-in-Your-Mouth Flavor

Omi beef, Shiga Prefecture's prized brand of beef, also reveals its true potential when straw-grilled. Characterized by its fine marbling and melt-in-your-mouth fatty flavor, Omi beef is quickly seared in the straw flames, resulting in a fragrant exterior and an incredibly tender, juicy interior. The straw's aroma combines with the high-quality fat of the Omi beef, creating a special scent and flavor that is simply unparalleled.

Our Straw-Grilled Shiga Omi Beef is a dish that encapsulates the rich bounty of Shiga and is extremely popular with both locals and tourists. By enhancing the meat's natural umami with the unique aroma of straw-grilling, you can discover a new dimension of Omi beef. We invite you to indulge in this luxurious Nagahama taste at our robatayaki izakaya.
