Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

Producers

From solo dining at our lively counter to dates with a loved one, family meals, and company parties, our versatile space is designed to accommodate any occasion.

In this article, we'll share specific tips and recommendations for making the most of your evening in Nagahama at Robata & Sake Uomaru. Be sure to add a visit to our restaurant to your Nagahama itinerary. It will surely deepen your travel memories with an unforgettable gourmet experience.

Savoring a Nagahama Izakaya: The Allure of Robata and Straw-Grilling That Stimulates the Senses

One of the greatest attractions of Robata & Sake Uomaru Nagahama is, without a doubt, the dynamic straw-grilling that unfolds before your eyes and the fresh seafood dishes prepared by our skilled chefs. Here, you can enjoy not just the taste but also the entertainment of watching your food being prepared. Take a seat at our lively counter to see the fragrant smoke from the straw rise and witness the chefs' brilliant skills up close, further whetting your appetite.

Two Signature Straw-Grilled Specialties: Bonito from Kochi and Omi Beef from Shiga

  • Straw-Grilled Bonito Direct from Kochi: Fresh bonito, shipped directly from Kochi, is grilled over straw to condense its unique smoky aroma and umami. The skin is crisp and fragrant, while the inside remains incredibly juicy. The roaring straw flames are a spectacular sight, creating a peak moment that stimulates all five senses. The price varies based on the market to ensure we serve the best bonito of the day.
  • Straw-Grilled Omi Beef from Shiga Prefecture: We also offer Shiga's prized brand of beef, Omi beef, cooked in the straw-grilled style. The aroma of the straw enhances the meat's natural umami, allowing you to fully enjoy its tender and rich flavor. You can savor this local delicacy at an affordable price, starting from 1,859 yen.

These straw-grilled dishes are our absolute must-try specialties. The savory scent of straw will stimulate your appetite and create an unforgettable experience.

Exquisite Sashimi Featuring Fresh Fish Direct from the Port

  • Sashimi of Fresh Fish Direct from the Fishing Port: We source the freshest catch of the day directly from the fishing port every day. Our skilled chefs carefully prepare the sashimi to bring out the fish's natural flavor, presenting a dish that is as beautiful as it is delicious. Feel free to ask our staff for the day's recommendations.
  • Yellowtail Belly Sashimi: A particularly popular item is our Yellowtail Belly Sashimi, available for 880 yen. The fatty belly of the yellowtail has a melt-in-your-mouth texture and a rich flavor that pairs exceptionally well with sake.

Another major draw of our restaurant is the opportunity to enjoy the freshest treasures from the sea. We proudly serve seasonal seafood at its peak.

Seasonal Robata Grill That Evokes the Changing Seasons

In addition to our straw-grilled specialties, we also offer a Seasonal Robata Grill, featuring carefully grilled seasonal ingredients. We select the most delicious vegetables and seafood of the season and grill them slowly over charcoal to maximize their natural flavors. The fragrant aroma and simple seasoning will let you appreciate the powerful taste of the ingredients themselves. The joy of discovering something new with each visit is the essence of robata-yaki.

The Art of Pairing: The Essence of Sake Tasting in Nagahama

The other pillar of Robata & Sake Uomaru Nagahama is our extensive selection of sakes from all over Japan, including local Shiga brews, all carefully chosen to enhance our cuisine. For anyone looking to enjoy a sake tasting in Nagahama, there is no better place. A deeper understanding of how sake and food complement each other will make your dining experience even richer.

Finding the Perfect Match for Your Meal

  • Pairing Sake with Straw-Grilled Dishes: For our fragrant straw-grilled dishes, we recommend a slightly dry, crisp sake. A full-bodied Junmai or a refreshing Junmai Ginjo that cleanses the palate pairs well with the straw-grilled bonito, standing up to its bold flavor. For the straw-grilled Omi beef, a rich Junmai Daiginjo or a Yamahai-style sake can embrace the fat and umami of the meat, creating a magnificent harmony in your mouth.
  • Pairing Sake with Fresh Sashimi: Delicate and aromatic sake is the perfect partner for fresh sashimi. For white fish, a clean, dry Ginjo or Junmai Ginjo will not overpower the fish's subtle flavor, adding an elegant aroma. For fattier fish like yellowtail belly, a slightly sweeter Junmai with a noticeable rice flavor will create a synergistic effect with the richness of the fish.
  • Pairing Sake with Seasonal Robata Grill: For our seasonal grilled vegetables and seafood, choose a sake that highlights the ingredients' natural taste. A versatile Junmai with a gentle aroma and smooth taste is perfect for simply seasoned robata-yaki. For grilled fish, an aged sake or a warm sake can be an excellent choice to complement the smoky notes.

Our knowledgeable staff will be happy to recommend the perfect sake pairing based on your preferences. From sake novices to connoisseurs, we are confident we can offer new discoveries and delights. We invite you to find your favorite from our curated selection, with prices starting from 500 yen.

A Journey Through Shiga's Local Sake

In addition to famous sakes from across the country, a key feature of our restaurant is our wide selection of local Shiga sake. Since you're visiting Nagahama, we hope you'll enjoy the local flavors alongside local sake. Brewed from the rice and water nurtured by Shiga's rich natural environment, these sakes have unique characters that reflect the local terroir. Enjoy Shiga's local sake as a memento of your trip to Nagahama.
