Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

03

Seafood & Sashimi

04

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

The Restaurant's Flavor, Unchanged! The Appeal of Uomaru's Takeout

Our takeout service is designed to deliver the exact same deliciousness you experience in our restaurant, with meticulous attention to detail from managing freshness to cooking and packaging.

Sealing in the Fragrance of Straw-Searing

  • 'Straw-Seared Bonito from Nagahama': Our skilled chefs dramatically sear exceptionally fresh bonito, shipped directly from Kochi, over a straw fire. This high-heat searing method locks in the bonito's umami and imparts the rich, distinctive aroma of the straw. You can fully enjoy this fragrant and condensed flavor even with takeout. Lightly searing it again just before eating will further enhance its aroma.

  • Straw-Seared Omi Beef from Shiga Prefecture: You can also enjoy Shiga's prized brand, 'Omi Beef,' prepared in our signature straw-seared style. The harmony of the meat's rich flavor and the straw's aroma creates an exceptional taste, even for takeout. It's a perfect companion for a bowl of rice or a glass of sake.

Enjoy Fresh Sashimi at Home Too

  • Sashimi of Fresh Fish Direct from the Port: Another of our specialties is sashimi, meticulously prepared by our skilled chefs using fresh fish delivered directly from the fishing port every morning. With our takeout service, you can indulge in the condensed deliciousness of its freshness and our culinary artistry. It is an excellent choice to grace your table on a special occasion at home.

  • Buri Harami (Yellowtail Belly) Sashimi: The fatty belly of the yellowtail is characterized by its melt-in-your-mouth texture and deep, rich flavor. We provide it at peak freshness so you can enjoy this ocean delicacy that fills your palate, right at home.

All these dishes are masterpieces that highlight the quality of our ingredients and the skill of our chefs, just as they do when you dine in. We prepare them with the utmost care for takeout to ensure that their quality and flavor are not compromised.

Even More Delicious! Tips and Tricks for Enjoying Your Takeout

Here are some simple tips to help you enjoy our takeout dishes to their fullest in the comfort of your home.

Maximizing the Flavor of 'Straw-Seared Bonito from Nagahama'

  • Lightly Sear It Again: Just before eating your takeout 'Straw-Seared Bonito from Nagahama,' quickly searing the surface in a frying pan or toaster oven will reawaken the straw aroma, making it even more delicious. Be careful not to overcook it, as the fish can become tough; a quick sear is key.

  • Add Condiments: In addition to the provided garnishes, feel free to add your own, such as sliced green onions, garlic, myoga ginger, or shiso leaves. This will enrich the flavor and allow you to enjoy a variety of taste profiles.

Choosing the Right Sake to Complement Seafood

  • Our dishes, especially the fresh sashimi and 'Straw-Seared Bonito from Nagahama,' pair exceptionally well with crisp, dry sake that has a refreshing aroma. While you can enjoy our recommended pairings at the restaurant, selecting your own favorite sake at home can create an even richer dining experience.

  • If you're unsure which sake to choose, please ask our staff. We are happy to offer advice on pairings that complement your meal.

Tips for Enjoying Other Dishes

  • Enjoy Hot Dishes While They're Hot: Straw-seared dishes and robatayaki are best enjoyed warm. We recommend eating them as soon as possible after you get home.

  • Be Mindful of Temperature for Cold Dishes: For dishes like sashimi, avoid over-chilling them in the refrigerator. Allowing them to return to room temperature slightly will help you better appreciate the fish's natural umami.

With these simple tricks, our takeout dishes can create an even more delicious and enjoyable time at home.
