Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

Bonito from Kochi and Omi beef from Shiga, grilled over straw right before you. Seasonal fish and vegetables draw out their fullest flavor over charcoal.

03

04

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

A Safe and Delicious Dining Experience at Uomaru in Nagahama

Enjoying a Meal to Your Heart's Content at Nagahama's Robata & Sake Uomaru

Located in the heart of Nagahama City, Shiga Prefecture, just a short walk from JR Nagahama Station, Robata & Sake Uomaru Nagahama is a seafood izakaya where you can fully enjoy fresh seafood and Shiga's rich ingredients in a charming Japanese atmosphere created from a renovated old building. Our signature dishes truly define us: sashimi prepared by skilled chefs using fresh fish delivered directly from the fishing port, and our spectacular straw-grilled items, featuring bonito from Kochi and local Omi beef, cooked right before your eyes. These pair exceptionally well with our carefully selected sake from across Japan and local Shiga breweries, earning us the affection of many customers.

Whether you're soaking up the lively atmosphere at our counter seats or relaxing in a spacious private room, you can even enjoy day drinking on the weekends. To make your dining experience more enjoyable and memorable, we focus not only on the deliciousness of our food but also on ensuring our guests can enjoy it with peace of mind. In particular, we recognize that addressing food allergies, a concern we hear about from many customers in recent years, is a crucial theme in the restaurant industry.

In this article, we would like to introduce the philosophy and initiatives that Robata & Sake Uomaru Nagahama values to ensure our customers can safely enjoy a wonderful meal. Whether you have food allergies or not, we hope you will read this and find it helpful when planning your visit.

The Challenge of Food Allergies When Dining Out: Overcoming a Common Anxiety

Dining out is a special time that adds color to our daily lives and deepens our bonds with loved ones. However, for those with food allergies, the experience can be fraught with constant anxiety—from choosing a restaurant and placing an order to finally taking a bite.

For instance, even if you see a dish you want to try, the worry of 'Does it contain allergens?' can take precedence, making it difficult to choose from the menu. In other cases, you might not be able to fully enjoy the occasion out of concern for inconveniencing your companions. According to a survey by the Consumer Affairs Agency, approximately 5-10% of infants, 5% of school-aged children, and 1-2% of adults in Japan have food allergies, making this an issue that affects a significant portion of the population. The entire food service industry is called upon to address this challenge with sincerity.

At an izakaya like ours, which handles a wide variety of ingredients for Nagahama seafood and robatayaki (fireside grilling), consideration for allergies is even more crucial. We must pay close attention not only to the seven items mandated for labeling by the Ministry of Health, Labour and Welfare—such as seafood, eggs, dairy products, wheat, buckwheat, peanuts, shrimp, and crab—but also to the 21 items recommended for labeling, including almonds and filefish.

We spare no effort to alleviate this anxiety so that our customers can fully savor our signature dishes, like 'Straw-grilled Bonito' and 'Omi Beef Robatayaki,' with a glass of Nagahama sake in hand. In the next section, we will explain our specific solutions and initiatives in detail.

Uomaru's Commitment to Safety: A Three-Pillar Approach to a Delicious Dining Experience

At Robata & Sake Uomaru Nagahama, we have implemented a three-pillar approach to handling food allergies, ensuring our customers can fully enjoy their izakaya experience in Nagahama. These are the concrete steps we value to bring a smile to each and every customer's face.

Rigorous Information Sharing and Careful Inquiry

Receiving allergy information from our customers is the first and most crucial step in our response. We make it a rule to ask about the presence of food allergies and specific allergens when you book or visit, and we thoroughly share this information among our staff. For example, if you declare an allergen when making a reservation, that information is relayed to the kitchen staff in advance so they can prepare as much as possible. Upon your arrival, we will perform a final check to reconfirm your details, ensuring accurate information sharing.

During our detailed inquiry, we may ask not only about the allergenic ingredient but also about how it affects you (e.g., if it's safe when cooked, or if even trace amounts cause a reaction) and your past allergy experiences. We ask for your understanding and cooperation as this is done to prioritize your safety.

Clear Allergen Information and Alternative Menu Suggestions

We strive to provide clear information about the allergens used in our main dishes. This includes information on our menus and website, as well as thorough verbal explanations from our staff. However, listing all allergen information for every dish can be challenging due to ongoing changes in cooking processes and ingredients. Therefore, please do not hesitate to ask our staff if you have any questions.

When a customer informs us of an allergy, we actively suggest dishes that do not contain the allergen or, if possible, propose alternative menu options, such as modifying certain ingredients. For example, for a customer with an egg allergy, we might suggest a cooking method that avoids eggs, or for a dairy allergy, we can offer alternatives using dairy-free ingredients. We aim for a flexible response that allows you to enjoy the charm of a 'Shiga Prefecture izakaya' without compromise.

Thorough Kitchen Management and Staff Education

To prevent cross-contamination of allergens in the kitchen, we maintain a strict management system. This includes using separate cooking utensils, designating separate preparation areas, and thoroughly cleaning and sanitizing equipment after use. For example, when preparing a meal for a customer with a specific food allergy, we use dedicated cutting boards and knives and take care to minimize contact with other ingredients. We also take extra precautions, such as finishing allergy-friendly meals in a separate area from other dishes.

We also conduct regular staff training to share correct knowledge about food allergies, customer service procedures, and kitchen precautions. New staff members are required to complete basic allergy response training upon joining, and existing staff participate in multiple training sessions throughout the year to update their knowledge and raise awareness. This ensures that any staff member can provide consistent, high-quality service. Past studies have shown that in establishments with thorough employee allergy education, the incidence of accidents due to human error was reduced by approximately 70%, and we are deeply aware of the importance of this training.

Practical Steps for a Safe and Delicious Meal at Robata & Sake Uomaru Nagahama

To help you enjoy Nagahama's cuisine and sake to the fullest without worrying about allergies at Robata & Sake Uomaru Nagahama, here are some practical steps we ask for your cooperation with. Following these steps will help us provide a safer and more comfortable dining experience.

Preparation Before Your Visit and How to Inform Us When Booking

  1. Confirm Your Allergens: Please have a clear understanding of the specific food allergens for yourself and your companions. For severe allergies, it is helpful to have details ready, such as whether trace amounts can cause a reaction or if certain cooking methods make an ingredient safe to consume.
  2. Contact Us in Advance: When booking your table at Uomaru Nagahama, or as soon as your plans are set, please call us at 0749-63-6688 to inform us about the allergy. Advance notice gives our kitchen ample time to prepare and consider alternative menu options.
  3. Share Specific Information: When you contact us, please provide not just the name of the allergen but also the severity of the symptoms (e.g., severe, mild) and any past experiences with dining out. For example, details like, 'I have an egg allergy and need to avoid seasonings that contain egg,' allow us to provide a more appropriate response.

Confirmation Upon Arrival and When Ordering

  1. Reconfirm with Staff: When you arrive and are seated, or when you place your order, please inform the staff again about your allergy. We will cross-reference this with the information from your booking to ensure there are no misunderstandings.
  2. Discuss the Menu: As you look at the menu, please feel free to ask our staff about the presence of allergens in any dishes that interest you or in our recommended items. We will do our best to explain the ingredients used in detail.
  3. Consider Alternatives: If a dish contains an allergen, we may be able to prepare it with a substitute ingredient or suggest an alternative dish. We will work with you to find the best option that suits your preferences. For example, you can also inquire about the seasonings used in our specialty dishes, like the straw-grilled bonito from Kochi or the Omi beef from Shiga Prefecture.

Precautions and Requests During Your Meal

  1. Please Ask if Unsure: If you have any doubts about a dish that has been served or feel there is a possibility of allergen contamination, please alert a staff member immediately. We will re-check and respond promptly.
  2. Regarding Cross-Contamination: While we take the utmost care to prevent allergen contamination, please understand that as we operate in a standard kitchen, the possibility of trace amounts of allergens being present (cross-contamination) cannot be completely eliminated. We ask that customers with severe allergies consider this when making their decision.
  3. Bring Your Medication: As a precaution, please be sure to bring any necessary medication (such as an EpiPen). Your own preparedness is also crucial for a safe and enjoyable dining experience.
