Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Nagahama, Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

02

03

Seafood & Sashimi

Fresh fish shipped straight from the port, finished into sashimi by skilled hands. Enjoy the seafood of Nagahama in seasonal plates such as our five-kind sashimi platter.

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Nagahama.

05

How to enjoy Robata

Robata Story

01

Watch the flames from Nagahama straw

The straw is cut by our own hands at contracted farms in Nagahama, Shiga. Watch the flames and the aroma rise from local rice-field straw, right across the counter.

02

One slice, no salt and no condiments

Take the first piece plain. Let the sweetness of bonito shipped from Kochi and the smoky scent of the straw be the only things you taste.

03

Switch gears with rock salt and citrus

From the second slice, reach for the condiments, rock salt and citrus. Fatty autumn returning bonito and straw-grilled Omi beef sharpen as the salt goes on.

04

Taste local sake by the guinomi cup

Ten selected sake labels, four of them from Shiga: Daijiro, Kirakucho, Ichihiro and Shichihonyari. Compare them from 490 yen for a 100ml guinomi cup.

For many, the keywords atmospheric izakaya in Nagahama might come to mind. However, finding a restaurant that not only serves delicious food but also offers a truly memorable and special experience can be surprisingly difficult.

Robata to Nihonshu Uomaru Nagahama Branch, located centrally within walking distance of JR Nagahama Station, welcomes guests with its charming Japanese atmosphere, exceptionally fresh seafood, and dishes that fully capture the bounty of Shiga. In this article, we'll introduce how Uomaru Nagahama can meet your expectations and create a wonderful experience for special occasions like business dinners and anniversaries.

The Challenge of Choosing an Atmospheric Izakaya in Nagahama: Finding the Perfect Place for a Special Day

Choosing a restaurant for a special occasion, such as a business dinner or an anniversary, can be a high-pressure task for the host or organizer. Many factors must be considered, from the quality of the food and the restaurant's ambiance to the availability of private seating and the variety of the drink menu.

You want to provide a memorable experience that makes guests think, I want to come back. However, while there are many options for an atmospheric izakaya in Nagahama, it can be difficult to know which one is the best fit. A lively, bustling restaurant full of groups can be appealing, but for a business dinner where you want to talk at length, or an anniversary where you want to cherish your time together, a calmer, more memorable space is often required.

To meet our customers' expectations for their special day, we pay meticulous attention to every detail, from our cuisine and atmosphere to our hospitality.

Dynamic Straw-Grilled Dishes and Fresh Sashimi Prepared Before Your Eyes

The stars of our menu are, without a doubt, exceptionally fresh seafood and the rich bounty of Shiga. Fresh fish delivered directly from the fishing port is prepared as sashimi by our skilled chefs in the most delicious way for that day, bringing out the maximum natural flavor of the ingredients.

  • Signature Dish! Straw-Grilled Bonito from Kochi and Omi Beef from Shiga: Our other signature dish is the dynamic straw-grilled items cooked right before you. Fresh bonito, shipped directly from Kochi, is seared instantly over a straw flame, adding a fragrant aroma and concentrating its flavor. The straw-grilled Omi beef, a brand of which Shiga is proud, is another masterpiece. The savory flavor of the meat, infused with the aroma of the flames, will make any special occasion even more magnificent. (Straw-grilled Omi beef from Shiga Prefecture is available from 1,859 yen.)
  • Seasonal Delicacies: We also recommend our robata-yaki (hearth-grilled) dishes, which feature seasonal ingredients that change throughout the year. For fresh fish sashimi, our Buri Harami no Tsukuri (Yellowtail Belly Sashimi) offers a melt-in-your-mouth texture and rich flavor from the fatty belly of the yellowtail. (Yellowtail Belly Sashimi is 880 yen.) We also have a wide variety of other specialty dishes, such as Ebi Cream Harumaki (Shrimp Cream Spring Rolls).

Sake to Enhance Your Business Dinner or Anniversary

Premium Sake from Across Japan to Complement the Cuisine

Delicious food is incomplete without delicious sake. At our restaurant, we have a wide selection of carefully chosen sake from all over Japan, as well as an extensive lineup of local Shiga sake. We can recommend the perfect one to further enhance the flavors of each dish.

  • The Joy of Sake Pairing: Enjoy pairing various types of sake with the fragrant aroma of our straw-grilled dishes, the delicate flavors of fresh sashimi, and the richness of our seasonal robata-yaki. Both sake connoisseurs and those less familiar with it can discover new charms of sake through its marriage with our cuisine. We offer a wide range of selected sake starting from 500 yen, allowing you to choose according to your preference.

Unique Services for a Memorable Experience

For important business dinners and anniversaries, small surprises and conversation starters are especially valuable. We offer unique services to brighten up such occasions.

  • Have Fun with Our Omikuji Chopstick Sleeves: The chopstick sleeves we provide are actually omikuji (paper fortunes). If you draw Daikichi (Great Luck), you'll receive one free drink! This little surprise is a great way to spark conversation and bring smiles to our guests' faces. It's especially popular at business dinners as a unique icebreaker to lighten the mood.

Uomaru Nagahama is not just an evening izakaya; it's available for use at various times. We can also accommodate anniversary lunches or business dinners that need to start early.
